Beef Enchiladas

Traditional beef enchiladas recipes require simmering steak for hours
- Cut back on the pickled jalapeños if you like your enchiladas on the mild side. Sour cream, diced avocado, shredded lettuce, and lime wedges make great enchilada sidekicks—let everyone at the table pick and choose as they wish.
- Ingredients3 garlic cloves, minced
- 3 tablespoons chili powder
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon sugar
- Salt
- 1 1/4 pounds top blade steaks, trimmed according to picture at left
- 1 tablespoon vegetable oil
- 2 medium onions, chopped
- 1 (15-ounce) can tomato sauce
- 1/2 cup water

- 1/3 cup chopped fresh cilantro leaves

- 2 cups good apple cider
- 3 1/4 cups unbleached all-purpose flour
- 1/4 cup graham flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1/4 teaspoons ground cinnamon
- 1/8 teaspoon freshly ground nutmeg
- 1/8 teaspoon ground mace
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 1/2 teaspoon kosher salt
- 4 Tablespoons (2 ounces) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 extra large eggs, at room temperature
- 1 1/4 teaspoon pure vanilla extract
- 1/2 cup buttermilk, at room temperature
- Vegetable oil or shortening for frying
- For the Cinnamon-Sugar
- 1 cup granulated sugar
- 2 teaspoons ground cinnamon
- pinch of freshly grated nutmeg
- pinch of ground mace
- pinch of ground allspice
- pinch of ground cloves
Broiled Hot Pepper Wings

Preheat the broiler. Line a sheet pan with foil, place a rack on top of the pan and oil the rack
- 2 tablespoons vegetable oil, plus extra for oiling rack
- 5 pounds chicken wings, split, wing tips cut off and discarded
- Kosher salt and freshly cracked black pepper
- 1 cup hot pepper jelly (recommended: Stonewall Kitchens)
- 1/2 cup freshly squeezed lime juice
- 1/2 cup hot sauce (recommended: Frank's)
Shitake Mushroom-Olive Oil Bread Pudding

Preheat oven to 375 degrees F
- 1 baguette, preferably stale, cut into cubes
- 1 2/3 cup whole milk
- 2 eggs, lightly beaten
- 3 tbsp Medium Intensity Extra Virgin Olive Oil, such as Ascolano plus more for greasing pan(s)
- 1 lb. shitake mushrooms, chopped roughly
- leaves from 1 sprig fresh rosemary, roughly chopped
- 1 onion, diced
- 1/4 cup Parmesan, plus more for sprinkling
- salt and pepper to taste
Sweet and Sour Meatballs

You may use frozen meatballs for this recipe/ These meatballs can be used with spaghetti and meatballs also
- Sauce:
- 1 cup brown sugar
- 1/2 cup beef bouillon
- 1/2 cup vinegar
- 2 tablespoons cornstarch
- 2 teaspoons soy sauce
- 2 tablespoons Worcestershire sauce
- 1 can (8 or 9 ounces) pineapple tidbits, drained Reserve for 2 tablespoons pineapple juice and add to sauce
- 1/2 cup chopped red bell pepper
- 1 small onion chopped
- 1 tablespoon coleman’s dry mustard powder
- 1/2 jar orange marmalade
- 1 jar store bought sweet and sour stir fry sauce
- Meatball Recipe:
- Extra-virgin olive oil
- 1 large onion, 1/4-inch dice
- Salt
- 2 cloves garlic, smashed and chopped
- Pinch crushed red pepper
- 1/2 pound ground beef
- 1/2 pound ground veal
- 1/2 pound ground pork
- 2 large eggs
- 1 cup grated Parmigiano
- 1/4 cup finely chopped fresh Italian parsley leaves
- 1 cup breadcrumbs
- 1/2 cup water
Brussels Sprouts

Preheat oven to 350 degrees F
- 6 ounces pancetta, big dice can substitute bacon
- 4 tablespoons capers, drained
- 2 pints Brussels sprouts, trimmed and halved
- 1 1/2 tablespoons balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper
- 1/3 cup pine nuts or your favorite nut
- 1/4 cup cranberries (dried)
- 1/4 cup raisins
- 1/4 cup golden raisins
Red Wine and Wild Mushroom Sauce

Place a clean skillet over medium heat
- 1 tablespoon unsalted butter
- Extra-virgin olive oil
- 2 shallots, minced
- 2 pounds assorted mushrooms, such as crimini, oyster, shiitake, chanterelle, or white, trimmed and sliced
- Leaves from 2 fresh thyme sprigs
- Sea salt and freshly ground black pepper
- 1/2 cup Cabernet Sauvignon
- 1/4 cup reserved beef broth (drippings from roast) or low-sodium canned broth
- 1/4 cup heavy cream
