In a 3-quart heavy saucepan on low heat, add sugar, flour and salt
- 2 1/2 cups sugar
- 6 tablespoons all-purpose flour
- Pinch salt
- 2 (12-ounce) cans evaporated milk
- 4 egg yolks
- 1/2 stick butter, cubed
- 1 teaspoon vanilla extract
- 1 box vanilla wafers, plus more for garnish, crumbled
- 5 bananas, sliced
- Whipped cream
- (If you choose you may use Jell-O brand Banana Pudding or Vanilla Pudding)

Place the grouper and shrimp in a large bowl
- Cold-Smoked Grape Tomatoes:
- 1 pound fresh grouper or pink snapper, skinned and cut in half lengthwise, then cut into small dice
