- 3 quarts water
- 2-3 pounds (beef brisket, chicken or seafood)
- 2 whole cloves
- 5-7 star anise pods
- 2 carrots cuts into thirds
- 2 cinnamon sticks

- 2 teaspoons sugar
- 2 cloves garlic, chopped
- 1 tablespoon olive oil

- 3 tablespoons fish sauce, or to taste
- 8-ounce jar of instant beef paste
- For The Noodles And Accompaniments
- 1/2 pack vermicelli rice noodles
- 1/2 bunch fresh cilantro
- 1/2 bunch fresh mint
- 1/2 bunch fresh basil
- 1/2 pound fresh bean sprouts
- 2 limes, quartered
- 1/2 cup chopped scallions
- 1/2 white onion, thinly sliced
- Dressings
- chili oil
- hoisin sauce or oyster sauce
- Sriracha
- fish sauce (nuoc cham)

- 1/2 cup sugar

- 1/4 cup half-and-half

- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

- For the meat filling:
- 2 tablespoons canola oil
- 1 cup chopped onion
- 2 carrots, peeled and diced small
- 2 cloves garlic, minced
- 1 1/2 pounds ground strip steak
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons all-purpose flour
- 2 teaspoons tomato paste
- 1 cup stout beer or beef broth

- 3/4 cup (1 1/2 stick) unsalted butter, room temperature
- 1/4 cup granulated white sugar
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups all purpose flour
- 1/8 teaspoon salt
- CARAMEL FILLING:
- 1 - 14 ounce can Dulce de Leche or sweetened condensed milk
- CHOCOLATE TOPPING:
- 6 ounces semi-sweet or bittersweet chocolate, cut into pieces

Linguine with Seafood in Saffron Broth

- 1/2 cup dry white wine
- 1/2 teaspoon saffron
- 4 tablespoons extra-virgin olive oil
- 2 1/2 teaspoons minced garlic
- 1 cup finely chopped yellow onion
- 1 teaspoon red pepper flakes
- 2 cups fish stock
- 24 mussels, scrubbed and de-bearded
- 3/4 pound medium white shrimp (about 24), shelled and deveined
- 1 pound clams cleaned
- 1 pound dried linguine
- 1/4 cup chopped parsley
- 1/2 cup finely grated pecorino
- 4 servings of linguine (I used DeCio Pasta - Saffron

- 1 quart beef broth or stock
- 2 pounds lean ground beef
- 2 medium onions, finely chopped
- 2 to 3 garlic cloves, minced (or to taste)
- 1 tablespoon chile powder
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1/4 teaspoon ground cloves
- 1/2 teaspoon red (cayenne) pepper
- 1 1/2 tablespoons unsweetened cocoa or 1/2 ounce grated unsweetened chocolate
- 1/2 teaspoon salt and coarsely-ground black pepper to taste
- 1 (15-ounce) can tomato sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cider vinegar
- 1 (16-ounce) package uncooked dried spaghetti pasta
- 1 to 2 (16-ounce) cans of Kidney Beans (or to your taste)
