  • 2 1/2 quarts fish or chicken stock (or a combination) (1/4 cup of fish sauce if used)
  • 1 (14-ounce) can whole tomatoes in juice, drained and chopped or 2 cups fresh tomatoes chopped
  • 1 pound cut fresh okra
  • 1 pound chicken thighs
  • 1 pound andouille sausage
  • 1 teaspoon chopped thyme
  • 1 Turkish or 1/2 California bay leaf
  • 1 rounded teaspoon cayenne
  • 1/2 cup chopped flat-leaf parsley
  • 1/2 cup chopped scallions
  • 1 1/2 pound shrimp in shell, peeled and deveined
  • 2 dozen shucked oysters with their liquor, oysters picked over for shell fragments
  • 1/2 pound lump crabmeat, picked over
