Boil chicken in 1 qt water with poultry seasoning, 1 rib of celery and 1 carrot cut in 1 inch pieces and file
- 1/2 pound bacon, chopped
- 1/2 About 1/2 cup vegetable oil
- 3/4 cup all-purpose flour
- 2 celery ribs, chopped
- 1 medium green bell pepper, chopped
- 1 medium onion, chopped
- 5 garlic cloves, finely chopped
- 2 1/2 quarts fish or chicken stock (or a combination) (1/4 cup of fish sauce if used)
- 1 (14-ounce) can whole tomatoes in juice, drained and chopped or 2 cups fresh tomatoes chopped
- 1 pound cut fresh okra
- 1 pound chicken thighs
- 1 pound andouille sausage
- 1 teaspoon chopped thyme
- 1 Turkish or 1/2 California bay leaf
- 1 rounded teaspoon cayenne
- 1/2 cup chopped flat-leaf parsley
- 1/2 cup chopped scallions
- 1 1/2 pound shrimp in shell, peeled and deveined
- 2 dozen shucked oysters with their liquor, oysters picked over for shell fragments
- 1/2 pound lump crabmeat, picked over
- Accompaniments: rice; gumbo filé powder; hot sauce
Sour Cream Streusel Coffee Cake

- 1 cup (2 sticks) unsalted butter
- 1-1/2 cups sugar
- 3 eggs
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup sour cream
- 1 teaspoon vanilla
- 5 ounces SCHARFFEN BERGER 62% Cacao Semisweet Chocolate, chopped into ¼-inch bits
- Streusel Topping
- 2 ounces SCHARFFEN BERGER 62% Cacao Semisweet Chocolate
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
- 1 cup toasted walnuts

Pork Chops with Fennel and Caper Sauce

In a large, heavy skillet heat the olive oil over high heat
- 1/4 cup olive oil
- 4 boneless (2-inch-thick) pork chops (about 2 pounds total)
- 3/4 teaspoon salt, plus more for seasoning meat
- 3/4 teaspoon freshly ground black pepper, plus more for seasoning meat
- 2 fennel bulbs with fronds, thinly sliced (about 8 ounces or 2 cups)
- 2 large shallots, thinly sliced
- 1/3 cup chopped fresh flat-leaf parsley, plus 1/3 cup
- 1/2 cup white wine
- 1 (28-ounce) can diced tomatoes, with their juices
- 1/2 lemon, zested
- 2 tablespoons capers
Almond yogurt cake with PAMA pomegranate liqueur

- 1 1/2 cups flour
- 1/2 cup ground almonds (I like Trader Joe's almond meal)
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1 cup sugar
- 1 cup plain yogurt
- 1/3 cup canola oil
- 1 tsp almond extract
- 4 Tbsp PAMA pomegranate liqueur, divided
- 1 cup confectioner's sugar, sifted
Meatballs in BBQ Gravy

Heat a large soup pot over medium-high heat
- For the gravy:
- 1 pound bacon, sliced into lardons
- 1/2 cup olive oil
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary leaves, minced
- 2 tablespoons brown sugar
- 1 1/2 glasses Chianti
- 3 tablespoons cider vinegar
- 1 small can tomato paste
- 1 or 2 chipotle peppers using 1 to 2 teaspoons of adobo (varies based on your desired heat level)
- 3 (28-ounce) cans chopped tomatoes
- Sea salt, preferable grey
- Freshly ground black pepper
- For the meatballs:
- 1 pound ground sirloin
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 2 tablespoons Parmesan, freshly grated
- 2 tablespoons finely chopped flat-leaf parsley
- 1 teaspoons dried oregano
- 1 tablespoon finely chopped basil leaves
- 1 cup onion, finely chopped
- 1 cup fine dried bread crumbs
- 1 clove garlic, minced
- Sea salt, preferably grey
- Freshly ground black pepper
- 1 cup beef broth

- 2 cups (260 grams) all purpose flour
- 1/3 cup (65 grams) granulated white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons (75 grams) unsalted butter, cold and cut into pieces
- 2 ounces dark chocolate chunks or chips (about 1/2 cup) (50 grams)
- 3/4 cup fresh or frozen raspberries
- 1/2 cup (120 ml) whole milk plain yogurt
- 1 teaspoon pure vanilla extract
- 1 large egg, lightly beaten
