Rinse and drain jalapeno peppers
- 12 pickled jalapeno peppers
- 1 (3 oz.) pkg. cream cheese, softened
- 1/2 c. shredded sharp Cheddar cheese
- 1/4 c. sliced green onion
- 12 pimento strips, optional
Cilantro Dressing

Drop garlic cloves and ginger through the feed tube of food processor while motor is on
- 3 cloves garlic
- 1 tablespoon minced fresh ginger
- 2 bunches cilantro, (rinsed well, most of stalky ends trimmed off) finely chopped
- 1/2 cup fresh lime juice
- 1 1/2 teaspoon wine vinegar
- 1/2 teaspoon cumin
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon honey
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup canola oil
- 1/4 cup olive oil

In a large bowl, combine the ground meat, ricotta, egg, Parmigiano-Reggiano, gherkins and pistachios
- 1/2 pound ground pork
- 1/4 pound ground veal
- 1/2 pound fresh ricotta
- 1 egg, beaten
- 2 tablespoons Parmigiano-Reggiano, grated
- 6 pickled gherkins, chopped
- 3 tablespoons chopped pistachios
- 2 tablespoons butter
- 1 cup brown chicken stock, recipe follows
- 1/2 cup milk, optional
- Salt and pepper, to taste

- 1 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon table salt
- 14 tablespoons (1 1/2 sticks) unsalted butter, slightly softened
- 1 cup sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups old-fashioned rolled oats
- 1/2 teapoon coarse sea salt (like Maldon or fleur de sel) (for sprinkling on top)
