Banana Nibby Bread

Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup butter (1 stick)
- 1 cup granulated sugar
- 2 eggs
- 1 cup mashed very ripe bananas, about 2 to 3 depending on size
- 1/3 cup milk
- 1 teaspoon lemon juice
- ½ cup SCHARFFEN BERGER Cacao Nibs
Honey Peanut Brittle

Preheat the oven to 200 degrees F and store the toasted peanuts on a baking sheet in the oven until ready to use
- 2 cups toasted peanuts
- 2 cups sugar
- 1 tablespoon butter
- 1/4 cup Marshall's Farm Blackberry Honey
- 1/4 cup light corn syrup (with vanilla)
- 1/4 cup water
- 1 teaspoon baking soda
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
Rhubarb-Gingersnap Icebox Pie

Preparation Crust • Preheat oven to 325°
- Crust
- Nonstick vegetable oil spray
- 1 cup ground gingersnap cookies (20-30 cookies, depending on brand, ground in a food processor)
- 2 tablespoons sugar
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly grated nutmeg
- 1/4 cup (1/2 stick) unsalted butter, melted
- Rhubarb Compote
- 1 cup fruity red wine, such as Shiraz
- 3/4 cup sugar
- 3/4 pound fresh rhubarb, cut lengthwise into 1/3" slices, then crosswise into 1 1/2"-long pieces (about 3 cups), or frozen rhubarb, thawed
- Assembly
- 1 quart good-quality vanilla ice cream
- 1/4 cup chilled heavy cream
- 1/4 cup crème fraîche or sour cream
- 1 tablespoon sugar
Almond Coconut Delight

First, blend almonds until creamy smooth in ½ portion (4 oz) milk
- 8 oz almond milk
- 4 ice cubes
- 15 raw almonds
- 1/2 tsp coconut extract
- 1 scoop protein of choice (Whey or Egg White Chocolate recommended)
- 1 sweetner of choice (optional)
- First, blend almonds until creamy smooth in 1/2 portion (4 oz) water. Then add remainder of ingredients.
Shrimp And Farro Salad

Rinse the farro well and cook in a large saucepan of boiling salted water
- 1 cup semi-pearled farro
- Water, to cook farro
- Salt, for water
- 1/2 cup extra-virgin olive oil
- Juice of 1 lemon
- 1/4 cup fresh mint leaves
- 2 tablespoons fresh parsley leaves
- 1 pound cooked shrimp, peeled and deveined
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1 large bunch watercress, washed well and stemmed
- Kosher salt and freshly ground black pepper
Ceviche (Shrimp and Grouper) with Serrano Chiles, Mango, Smoked Tomatoes, Crispy Plantain Chips

Place the grouper and shrimp in a large bowl
- 1 pound fresh grouper or pink snapper, skinned and cut in half lengthwise, then cut into small dice
- 12 large cooked shrimp, shelled, deveined and halved
