Salad: PGX Dijon Chicken Salad

1.In a medium bowl, mix together the broth, mustard, oil, and PGX granules
- 1 1/2 tablespoons chicken broth, regular
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon extra-virgin olive oil
- 4 grams PGX granules
- 3 ounces broiled boneless, skinless chicken breasts, chopped
- 1/2 cup chopped celery
- 1/3 cup peeled, chopped sweet apples
- 1/2 C halved red grapes
- 1/3 cup golden raisin
- 1 tablespoon capers, drained (optional)
- salt
- ground black pepper to taste
Ina's Easy Tomato Soup & Grilled Cheese Croutons

In a large pot or Dutch oven such as Le Creuset, heat the olive oil over medium heat
- 3 tablespoons good olive oil
- 3 cups yellow onions, chopped (2 onions)
- 1 tablespoon minced garlic (3 cloves)

- 1 (28-ounce) can crushed tomatoes, preferably San Marzano
- Large pinch of saffron threads

- 1 tablespoon dark brown sugar

- 1 cup white whole wheat flour
- 2/3 cup splenda granulated sweetener

- 2 2/3 cups egg white product or 5 medium egg whites, separated from yolks
- 1/2 cup chopped spinach
- 1 tablespoon unsalted raw pine nuts
- 3/4 cup no-sugar-added salsa
