In a large bowl, combine the zucchini, garlic, basil, tomatoes, olive oil, capers, olives, lemon juice, salt
- 1/2 pound young zucchini, sliced 1/4-inch thick, into 1/2 moons
- 2 cloves garlic, sliced paper thin
- 12 large leaves basil, torn in 1/2
- 1 pound can tomatoes, roughly chopped, retaining seeds and liquid
- 1/2 cup extra-virgin olive oil
- 2 tablespoons salt packed giant capers, rinsed of salt and drained
- 1/4 cup tiny black olives
- 1/2 lemon, juiced
- 2 tablespoons kosher or sea salt
- 1 pound dried penne pasta
- 2 tablespoons crushed red pepper flakes
- Freshly cracked black pepper
- Note: this dish is not served hot.
Neely's Individual Chicken Pot Pies

Preheat your oven to 375 degrees F
- 4 cups chicken broth
- 1 bouillon cube
- 1/2 cup (1 stick) butter
- 1 onion, finely chopped
- 2 large carrots cut in 1/2-inch rounds
- 1 rib celery, sliced
- 3 tablespoons chopped chives
- 2 cloves garlic, chopped fine
- Salt and freshly ground black pepper
- 1/2 cup all-purpose flour
- 1/4 cup heavy cream
- 3 tablespoons dry sherry
- 1 store-bought 2-pound rotisserie chicken, shredded
- 1 (7-ounce) bag frozen pearl onions
- 1 (9-ounce) box frozen peas
- 2 (9-ounce) packages store-bought rolled out pie dough
- 1 egg beaten with 1 tablespoon water
Soup: Vegetable Soup/Broth

Wash and cut up the vegetables
- Preparation:
- 1 Tbsp olive oil, 1 onion,
- 1.5 lbs vegetables (e.g.
- 1 leek stalk, 2 carrots,
- 1 celery, 1/2 caulifl ower
- head, 2 bunch broccoli),
- salt and pepper,
- fresh herbs
- You may use other fresh or
- frozen vegetables.
- Wash and cut up the
- vegetables. Heat oil in
- larger pot and sauté
- vegetables for a few
- minutes. Add 8 cups of
- water and let simmer for

- vegetable broth, strain out
- the solid pieces. Season
