Quick Marinara Sauce

Heat the oil in a medium saucepan over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 1/2 medium onion, diced
- 3 cloves garlic, chopped
- 3 1/2 cups whole, peeled, canned tomatoes in puree (about 1 (28-ounce) can), chopped or crushed by hand
- Fresh thyme sprig
- Fresh basil sprig
- 3 plum tomatoes, chopped (optional)
- 2 teaspoons kosher salt
- Freshly ground black pepper
Chicken Fettuccine with Pesto Cream Sauce

1.Place chicken breasts between two pieces of plastic wrap
- 3 boneless, skinless chicken breast halves (6 to 8 ounces each)
- Coarse salt and ground pepper
- 1 tablespoon olive oil
- 1/2 pound fettuccine
- 4 cubes (1/2 cup) frozen Basil Pesto
- 1/4 cup heavy cream
Lemon and Olive Chicken

1.Sprinkle chicken with 1 teaspoon each salt and pepper
- 8 bone-in chicken breast halves
- Salt and pepper
- 3 tablespoons olive oil
- 2 lemons
- 2 onions, chopped
- 4 cloves garlic, minced
- 1 cup green olives, pitted and halved
- 2 cups chicken stock or reduced-sodium broth
- 1 teaspoon dried thyme
- 1/2 teaspoon crushed red pepper
Frosting: Cream Cheese Frosting

For the Frosting: In a mixer, fitted with a paddle, add the cream cheese
- For Garnish:
- 2 (8-ounce) packages cream cheese
- 1 cup confectioners sugar
- 1/4 cup milk
- 1 tablespoon vanilla extract
- Zest of one lemon
- Whole pecans
Sione's Barbecue Chicken

1. In a large bowl, stir the soy sauce and brown sugar together to dissolve the sugar
- 2 cups soy sauce
- 3/4 cup brown sugar
- 3 cloves of garlic, minced
- 2 tablespoons finely grated ginger plus any juice created by grating
- 10 to 12 pieces of cut up frying chicken
Pumpkin Cupcakes with Cinnamon and Honey Glaze

Preheat oven to 350 degrees
- Nonstick Spray
- 1 cup Whole Wheat flour
- 1 cup All Purpose Flour
- 1 1/2 cups Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Pumpkin Pie Spice
- 1/2 tsp Sea Salt
- 1 1/2 cups Sugar
- 1 stick Butter, softened
- 3 eggs
- 1 medium size Sweet Potato, roasted, skin removed
- 1/3 cup Skim Milk
- 1 can (15 oz) 100% Pumpkin Puree
- 1/2 cup Cinnamon Honey Glaze
- Cinnamon Honey Glaze
- 1/4 cup Butter, melted
- 2 cups Powdered Sugar
- 2 TBSP Heavy Cream or Milk
- 1/2 tsp Cinnamon
- 1 TBSP Honey
- Combine all ingredients until smooth.
Chew: Cereal Bowl Egg and Cheese Breakfast Burrito

Line 2-cup microwave-safe cereal bowl with microwave-safe paper towel
- 1 flour tortilla (6-inch)
- 1 egg
- 1 Tbsp. shredded Mexican cheese blend
2013: Buttery Cooked Carrots

Cook carrots in a large pot of boiling water until tender
- 1 pound baby carrots
- 1/4 cup margarine
- 1/3 cup brown sugar

- 1 bottle silver tequila
- 1 cup orange-flavored liqueur (recommended: Cointreau)
- 1/3 cup fresh lime juice
- 1 to 2 cups seltzer
Bob's Pressure Cooker BBQ Sauce

1. Combine all ingredients in mixing bowl, large jar or food storage container and mix until well blended
- 2 cans tomato paste (6 oz. each)
- 1/3 cup white vinegar
- 1/4 cup water
- 3 tablespoons light brown sugar
- 1 tablespoon molasses
- 1 tablespoon Dijon mustard
- 1 teaspoon liquid smoke
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon celery salt
- 1/4 teaspoo ground black pepper
- Small pinch cinnamon
