Sweet Lemonade Cake

Preheat oven to 350 degrees F
- 1 box lemon cake mix
- 4 large Eggland’s Best Eggs
- 1/2 cup milk
- 1/2 cup canola oil
- 1 cup sour cream
- 3.4 ounce package vanilla or lemon instant pudding mix
- 1/4 cup lemonade mix, I used Crystal light dry mix
- Sweet Icing
- 1 cup powdered sugar
- 4 tablespoons heavy whipping cream

Pineapple and coconut are one of my favorite flavor combos - so fresh and light
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/2 cup coconut milk
- 1/4 cup coconut oil (Melted)
- 1/4 cup crushed pineapple (undrained)
- 1 teaspoon vanilla extract
- 6 tablespoons soft butter
- 1 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 2 tablespoons coconut milk
- 1 teaspoon vanilla
- Garnish - cherries, coconut and pineapple chunks
Carrot - Squash Muffins with Cream Cheese Icing

The carrots and summer squash as well as the honey, applesauce and pecans all have health benefits
- 1 1/2 c. Self-rising flour
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 3/4 c. brown sugar (we use Splenda)
- 1 1/2 c. carrots, shredded
- 1 c. summer squash or zucchini, shredded
- 1 c. pecan or walnut pieces, optional
- 1/4 c. honey
- 2 eggs
- 1/2 c. applesauce (or 1/2 c. oil)
- Cream Cheese Icing
- 1 8 oz. bar cream cheese, softened
- 1 c. powdered sugar
Strawberry Cupcakes with Strawberry Cream Cheese Frosting

- 1 box of white cake mix
- 1 (3oz) box of strawberry instant gelatin
- 1 (16 oz) bag frozen strawberries, pureed (Set aside 1/4 C. for frosting)
- 4 large eggs
- 1/2 C. canola oil

- Frosting:
- 1/4 C. butter, softened
- 1 (8oz) package cream cheese, softened
- 1/4 C. pureed strawberries
- 1/2 t. vanilla extract
- 4 C. powdered sugar

- Cream Cheese Frosting:
- 2/3 c. shortening (or butter, softened)
- 1 c. sugar
- 2 eggs
- 1/3 c. milk
- 1 tsp. vanilla
- 3 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 8 oz. cream cheese-softened
- 1/4 c. butter, softened
- 1 tsp. vanilla
- 1 to 1 1/2 lbs powdered sugar
- Toppings:
- 4 packets Pop Rocks (a combination of red and blue. See notes above)
- edible star sprinkles (optional)
