- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 stick butter, soft
- 1/2 cup peanut butter
- 1 egg
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 & 1/2 cups all purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- Hershey’s Kisses (the hugs or cookies n’ cream ones - something light in color)
- Gold sprinkles (these are the ones I used)
- Edible gold color mist (Wilton makes a whole line of edible color mist)
Gingersnap Pumpkin Cheesecake

Instructions Preheat oven to 350 degrees Fahrenheit
- For the Crust
- 2 cups gingersnap crumbs (about 40 store-bought cookies, finely crushed with a food processor)
- 5 Tbsp sugar
- 6 Tbsp unsalted butter, melted
- For the Filling (all ingredients at ROOM TEMPERATURE0
- 4 (8oz) packages cream cheese, room temperature (I used Neufchatel, but use Philadelphia, not the cheap store brand.)
- 1 1/4 cups sugar
- 3 Tbsp all-purpose flour
- 1 cup canned pumpkin puree, room temperature (Preferably LIbby's brand.)
- 2 Tbsp Homemade Pumpkin Pie Spice or store-bought
- 1 Tbsp vanilla extract
- 1/2 tsp salt
- 4 large eggs, cracked open into a bowl, room temperature
