Zucchini Parmesan Crisps

- 1 lb. zucchini or squash (about 2 medium-sized)

Jamaican Beef Patties

Dough: Sift the flour, curry powder and salt into a large bowl
- PASTRY:
- 2 cups Flour
- 1/4 teaspoon Salt
- 1/2 tablespoon curry powder
- 1/4 cup Solid shortening
- 1/4 cup (1/2 stick) margarine
- 1/3 cup Cold water
- MEAT FILLING:
- 2 tablespoon Margarine
- 1 Small white onion, Finely chopped
- 1/4 teaspoon Chopped Scotch Bonnet pepper (didn’t have, left out)
- 1/2 lb. Lean ground beef
- 1/2 teaspoon Salt
- 1/2 teaspoon Freshly ground black pepper
- 1/2 teaspoon Curry powder
- 1/2 teaspoon Dried thyme
- 1/4 cup Breadcrumbs
- 1/4 cup Beef or chicken stock
- 1 Egg, beaten
- 1/4 cup Water
Braised String Beans and Chickpeas

- 1 large shallot, thinly sliced crosswise
- 1/4 teaspoon red pepper flakes

- 1/2 cup mayonnaise
- 1/3 cup granulated sugar

- 1/8 t pepper
- 8 cups finely chopped cabbage (1 Head)

- 1 cup warm whole milk or buttermilk (about 105 degrees F.)

- 4 ounces salami or similar meat, cut into 1/4-inch cubes
- 3-1/2 cups bread flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 eggs, slightly beaten
- 6 ounces unsalted butter, room temperature
- 6 ounces shredded provolone or similar cheese
- Olive oil for greasing pans and brushing on loaves
Ricotta Cream Cheese Pie

- For the Crust:
- 8 tablespoons of butter
- 1/2 cup of sugar
- 1 cup of Graham cracker crumbs (about 4 – 5 sheets of graham crackers)
- For the filling:
- 3 eggs
- 9 ounces of part-skim Ricotta cheese
- 8 ounces of cream cheese
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tsp baking powder
- 1 tsp vanilla
- 1/4 tsp grated lemon peel
- 1/4 tsp grated orange peel
- 1 tsp lemon juice
- Topping for pie:
- 1/4 cup almonds
- 1/4 cup graham crackers (about 2 sheets of graham crackers)
White Bean Soup (Fassoulatha)

Drain beans and cook them, covered, in a large pot of boiling water until tender, about 1 1/2 hours
- 1 pound dried white beans, soaked overnight
- 2 tablespoons extra-virgin olive oil
- 2 large onions, finely chopped
- 2 stalks celery, finely chopped
- 2 large carrots, finely chopped
- 1 quart water
- 2 large ripe tomatoes, peeled and mashed, or 1 tablespoon tomato paste
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- Freshly ground pepper, to taste
