Nutella cupcakes

Preheat the oven to 190°C/fan oven 170°C/375°F/Gas mark 5
- For the cupcake:
- 125 g unsalted butter, at room temp
- 125 g caster sugar
- 2 eggs
- 125 g self raising flour
- 2 tablespoons milk (not skimmed)
- 5-6 teaspoons nutella
- For the Swiss meringue buttercream:
- 4 egg whites
- 250 g caster sugar
- 250 g unsalted butter
- 2 teaspoons vanilla extract
- 3-4 tablespoons nutella (I used 3)
Peanut Butter Blondies

1Preheat oven to 350°F. Lightly spray a 13x9inch baking pan with nonstick cooking spray
- 1 cup (2 sticks) butter, melted
- 1 cup chunky-style peanut butter
- 1 cup firmly packed light brown sugar
- 1 cup granulated sugar
- 1 cup semisweet chocolate chips
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 3 large eggs, lightly beaten
Spanakopita Bites

Preheat oven to 375 degrees Heat 1 tablespoon of oil in medium skillet over medium heat
- 1 Tablespoon vegetable oil
- 1 small onion, chopped
- 3 green onions, chopped
- 10 ounces frozen chopped spinach. thawed and squeezed dry
- 4 to 6 ounces domestic feta cheese, crumbled
- 1 cup cottage cheese
- 1 egg
- Salt and pepper to taste
- 1 pound phyllo, thawed
- 8 tablespoons butter (1 stick), melted
- 2 tablespoons vegetable oil

proof yeast in 3 tbsp of sugar (10 min) add baking powder to flour
- dough:
- 2 cups warm water or milk (or combo of both)
- 1 pkg yeast
- 6 eggs
- 3 tbsp. sugar
- 1 lb Crisco
- 1 tbsp vanilla
- 1 tsp baking powder
- 6 - 8 cups flour (as much as needed)
- filling:
- 2 containers nutella
- coating:
- 1 cup sugar
Butternut Squash Soup (Cooking Light)

1. To prepare soup, melt butter in a large saucepan over medium-high heat
- Soup:
- 1 tablespoon butter
- 3 1/2 cups cubed peeled butternut squash (about 1 1/2 pounds)
- 3/4 cup chopped carrot
- 1/2 cup chopped sweet onion
- 2 1/2 cups fat-free, less-sodium chicken broth
- 1/4 cup half-and-half
- 1/8 teaspoon salt
- Toasts:
- 4 (1-ounce) slices French bread
- 3 ounces thinly sliced Swiss cheese

- 175 g unsalted butter, softened at room temperature
- 40 g icing sugar
- 1/2 teaspoon pure vanilla extract
- 175 g plain flour
- 40 g cornflour (cornstarch)
Tuna Cakes

Open albacore tuna and drain the water from the tuna
- 2 , 5 ounce cans StarKist Albacore Tuna in water
- 1/2 Tablespoon Old Bay Seasoning (I used Old Bay Seasoning Rub)
- 1/2 chopped onion
- 1 tsp salt
- 1 tsp pepper
- 2 egg whites
- 1/4 Panko bread crumbs (plain)
- Recipe for Chipotle Mayo
- 1/4 cup Reduced-fat Miracle Whip Salad Dressing
- 2 tsp chili powder
- 1 tsp lime juice
Eggplant Rollatini

Preheat oven to 350 Season the pieces of eggplant with salt and freshly ground pepper
- 2 Eggplants (sliced lengthwise into 1/4-inch-thick pieces)
- 1/2 cup Olive Oil
- 1 cups Ricotta
- 1/2 cup Basil (chiffonade)
- 2 cloves Garlic (minced)
- 3 sprigs Thyme (leaves only - chopped)
- Zest of 1 Lemon
- Salt and Freshly Ground Pepper
- 1/4 cup Parmigiano Reggiano plus extra to garnish
- 2 cups Tomato Sauce
- 1 egg
- 1/2 cup mozzarella (shredded)
"Instant" Pancake Mix

- 6 cups all-purpose flour
- 1 1/2 teaspoons baking soda (check expiration date first)
- 3 teaspoons baking powder
- 1 tablespoon kosher salt
- 2 tablespoons sugar
- 2 eggs, separated
- 2 cups buttermilk
- 4 tablespoons melted butter
- 2 cups "Instant" Pancake Mix, recipe above
- 1 stick butter, for greasing the pan
- 2 cups fresh fruit such as blueberries, if desired
