Hazelnut-Praline Torte

1.Preheat oven to 350 degrees
- Cake:
- 1 1/4 cups hazelnuts, toasted, finely ground
- 1 3/4 cups walnuts, toasted, finely ground
- 1 1/2 cups confectioners' sugar, sifted, plus more for dusting
- 9 large eggs, separated, room temperature
- 1 1/4 teaspoons salt
- 3/4 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 2 1/4 cups sifted cake flour (not self-rising)
- Hazelnut Syrup:
- 1 cup sugar
- 1/4 cup hazelnut liqueur, such as Frangelico
- Caramel-Cream Filling:
- 1/2 cup sugar
- 2 cups cold heavy cream
- 1 cup whole milk
- 2 teaspoons unflavored gelatin
- 3 large egg yolks, room temperature
- Praline:
- Vegetable oil, for baking sheet
- 2 cups sugar
- 1 tablespoon corn syrup
- 1/2 cup hazelnuts, toasted, skins removed
- 1/2 cup whole blanched almonds, toasted
Classic Pecan Tart

To make the pastry, in a bowl, stir together the flour and salt
- For the pastry dough:
- 1 1/4 cups soft winter-wheat flour, such as
- White Lily brand, or cake flour
- 1/2 tsp. salt
- 1/4 cup cold solid vegetable shortening
- 4 Tbs. (1/2 stick) cold unsalted butter, cut
- into small cubes
- 3 to 6 Tbs. ice water
- For the filling:
- 3/4 cup sugar
- 3/4 cup light corn syrup
- 1/3 cup unsalted butter, melted
- 3 eggs, lightly beaten
- 2 Tbs. bourbon (optional)
- 1 Tbs. grated orange zest
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1 cup pecan halves, plus 1/3 cup coarsely
- chopped pecans
Almost Famous Spinach Dip

Bring a large pot of salted water to a boil
- Kosher salt
- 2 10-ounce bags spinach, stems removed
- 1 tablespoon unsalted butter
- 2 tablespoons minced onion
- 1 clove garlic, minced
- 2 teaspoons all-purpose flour
- 1 1/4 cups whole milk
- 1/2 teaspoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1 1/4 cups grated parmesan cheese
- 1/4 cup sour cream, plus more for serving
- 1/2 cup shredded white sharp cheddar cheese
- 1/2 cup frozen artichoke hearts, thawed, squeezed dry and roughly chopped

- Butter Cookies:
- 1 butter cookie dough disk, at cool room temperature
- 1 1/2 cups blueberries
- 2 Tbs. granulated sugar
- 1 Tbs. fresh lemon juice
- 1/2 cup all-purpose flour
- 1/3 cup firmly packed light brown sugar
- 1/4 cup old-fashioned rolled oats
- 1/2 tsp. ground cinnamon
- 3 Tbs. unsalted butter, melted
