Salt Cod Croquettes

Known as bolinhos in Portuguese ("little cakes"), these croquettes
- 1/2 pound(s) skinless, boneless salt cod, rinsed
- 1 cup(s) milk
- 2 thyme sprigs
- 1 bay leaf
- 8 clove(s) garlic, 3 smashed, 5 minced
- 1 pound(s) Yukon Gold potatoes, peeled and cut into 2-inch chunks
- 1 tablespoon(s) extra-virgin olive oil
- 1 large shallot, minced
- 3 tablespoon(s) chopped cilantro
- 1 teaspoon(s) piment d'Espelette
- 1 large egg yolk
- 3 large eggs
- 1 cup(s) all-purpose flour
- 1 1/2 cup(s) fine breadcrumbs
- Vegetable oil, for frying
- Lemon wedges, for serving

- 1 tbsp vanilla (a little less, check as you go)
- pinch of orange zest
- pinch of cinnamon
- 1 cup marscapone
Mini Apple Pies

These apple pie tartlets or mini apple pies are a perfect treat to have during these cold winter months
- 4 tbsp unsalted butter, softened ( I used ghee/clarified butter)
- 2 large Granny Smith Apples, peeled, cored and diced into 1/4 inch cubes
- 1/2 tsp ground cinnamon
- pinch nutmeg
- 1/8 tsp salt
- juice of half a lemon (about 1 1/2 tbsp)
- 1/4 cup All purpose flour
- 1/4 cup plus 2 tbsp packed brown sugar
- 1/4 cup pecans, chopped ( I used pecan chips)
- 1/2 portion sweet tart dough ( I added a pinch of cinnamon powder in the dough, find recipe for tart dough here- http://wp.me/p10soU-RA)
- whipped cream, to serve
- caramel flavored syrup, for topping

- 1/3 cup cornstarch
- 1 1/2 cups flour
- 2 teaspoons garlic, minced
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 24 ounces beer
- 4 vidalia onions
- Seasoned flour
- 2 cups flour
- 4 teaspoons paprika
- 2 teaspoons garlic powder
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne
- Outback Dipping Sauce
- 1/2 cup mayonnaise
- 2 teaspoons ketchup
- 2 teaspoons creamed horseradish
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon dried oregano
- 1 dash black pepper
- 1 dash cayenne
Ice Cream Cups

Whisk egg whites in a large bowl until soft peaks form
- 2 large egg whites
- 1/8 teaspoon salt
- 3/4 cup confectioners' sugar
- 1/4 teaspoon pure vanilla extract
- 1/2 cup all-purpose flour
- 4 tablespoons (1/2 stick) unsalted butter, melted and cooled
- Vegetable oil cooking spray, for iron
- 2 pints ice cream or sorbet, for serving
Best Chocolate Chip Cookie

Preheat oven to 350 degrees F
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons hot water
- 1/2 teaspoon salt
- 2 cups semisweet chocolate chips
- 1 cup chopped walnuts
- comment*** first batch turned out flat so I added another cup of flour made them wonderful!

- 40 g (1/2 cup) milk powder
- 40 g (1/4 cup) all-purpose flour
- 12 g (2 tablespoons) cornstarch
- 25 g (2 tablespoons) granulated sugar
- 2 g (1/2 teaspoon) kosher salt
- 55 g (4 tablespoons, 1/2 stick) butter, melted
- 20 g (1/4 cup) milk powder
- 90 g (3 ounces) white chocolate
- Makes about 260 g (2 1/4 cups)
