  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 2 tablespoons freshly squeezed lime juice (about 1 lime)
  • 1 tablespoon finely grated lemon zest
  • 3 tablespoons cold unsalted butter, cubed
  • Meringue:
  • 1/4 cup egg whites (about 2 large eggs)
  • 1/2 cup sugar
  • 1/4 teaspoon cream of tartar
  • Pinch fine salt
  • 1 (6-cup) standard non-stick muffin tin
