Maraschino Cherry Almond Filling

Soften gelatin in a pyrex cup with the 1/4 cup water for 5 minutes
- 1 Tablespoon unflavored gelatin
- 1/4 cup water
- 1/4 cup cherry juice
- 8 ounces chopped Maraschino Cherries
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 cups whipped cream
- 1/4 teaspoon Vanilla
- 1/4 teaspoon almond flavoring
- 1/3 cup blanched almonds, finely chopped

Preheat oven to 350 degrees
- 1 cup all-purpose flour, spooned and leveled
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 ounces semisweet or bittersweet chocolate, chopped
- 1/2 cup (1 stick) unsalted butter, cut into small pieces
- 1/2 cup granulated sugar
- 1/4 cup packed dark-brown sugar
- 2 large eggs
- 1 package (about 12 ounces) semisweet chocolate chunks
- 1 1/2 cups dried cherries

In a large bowl, combine the cookie crumbs, butter and sugar
- 2 cups chocolate wafer crumbs (about 32 cookies)
- 1/3 cup butter, melted
- 1/4 cup sugar
- 1 cup hot fudge ice cream topping, warmed
- 2 quarts vanilla ice cream or frozen vanilla yogurt, softened
- 2 pints raspberry sherbet
- 1 carton (8 ounces) frozen whipped topping, thawed

- 4 cups fresh or frozen cranberries
- 3-1/2 cups unsweetened pineapple juice

- 1 can (20 ounces) unsweetened pineapple tidbits, drained
- 1 cup chopped pecans
