Stuffed Cabbage Casserole

Preheat oven to 350°F. Spray a large glass casserole dish with non-stick spray
- Ingredients:
- 2 tsp olive oil, divided
- 1 lb. 95% lean ground beef
- 1 large onion, chopped fine
- 1 tbsp finely minced garlic
- 1/2 tsp. dried thyme
- 1 tsp sweet Hungarian Paprika
- salt and fresh ground black pepper to taste
- 1 1/2 heads green cabbage, coarsely chopped
- 1 can (14.5 oz.) petite dice tomatoes with juice
- 1 can (15 oz.) tomato sauce
- 1/4 cup water
- 2 cups cooked brown rice
- 2 cups low-fat mozzarella cheese (Sargento)
Chicken Enchiladas

In a saucepan, melt butter over medium heat
- 1 tablespoon butter
- 2 medium onions, chopped
- 1 garlic clove, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup milk
- 2 cans (4 ounces each) chopped green chilies
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 12 flour or corn tortillas
- 1-1/2 cups shredded cooked beef or chicken
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 1 cup (4 ounces) shredded cheddar cheese
- 2 green onions with tops, thinly sliced
- Sour cream
- Salsa
Chicken Quesadillas

- 1 package (6 oz) refrigerated cooked Southwest-flavor chicken breast strips
- 1/2 cup chunky-style salsa
- 8 flour tortillas (6 to 8 inch)

- 2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)

- 1 lb. Smoked Fish, Flaked and Without Bones
- 1 Tsp. Minced Onion
- 2 Tsp. Chopped Celery

- 1/2 Cup Panko bread crumbs
- PAM® Original No-Stick Cooking Spray
- 2 tablespoons Lite Ranch Dressing
- 1 tablespoons Gulden's® Spicy Brown Mustard
- 1 teaspoon Garlic Parsley salt
- 1/2 teaspoon ground black pepper
- 2 boneless, center-cut pork chops, 1/2-inch thick
Reuben Soup

In a large soup pot, melt the butter over medium heat
- 4 tablespoons unsalted butter
- 1/2 cup chopped sweet onion
- 1/2 cup chopped celery
- 1/2 cup shredded carrots
- 1/4 cup all-purpose flour
- 3 cans low sodium low fat beef broth
- 2 cups chopped, cooked corned beef
- 2 1/2 cups sauerkraut (drained)
- 2 cups fat-free half-and-half or light cream
- 1 1/2 cups shredded Swiss cheese
- Croutons
- If soup is not thick enough to your liking, mix cornstarch with some beef broth and add to finished soup to thicken.
Chocolate Lasagna

1. Begin by crushing 36 Oreo cookies
- 1 package regular Oreo cookies (Not Double Stuff) – about 36 cookies
- 6 Tablespoon butter, melted
- 1 8 ounce package cream cheese, softened
- 1/4 cup granulated sugar
- 2 Tablespoons cold milk
- 1 12 ounce tub Cool Whip, divided
- 2 – 3.9 ounce packages Chocolate Instant Pudding.
- 3 1/4 cups cold milk
- 1 and 1/2 cups mini chocolate chips

- 3/4 cup uncooked white rice
- 1 1/2 cups low sodium, low fat vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 3 1/2 cups canned black beans, drained
- Cooked White Rice
Pulled Pork in Crockpot
