- 1 lb. beef fillet cut into 2 x 1 x 1/4-inch slices

- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 1/2 cup chopped dill pickles
- 1/4 cup brandy
- 2 cups whipping cream
- 5 tsp Hungarian sweet paprika
- 12 oz. fettuccine
- 1 tbsp fresh lemon juice
- 6 drops hot pepper sauce (such as Tabasco)
- Sour cream
- 2 tbsp chopped fresh parsley
BAKED MINI PIEROGIES PARMESAN

- Ingredients
- 1 (12 ounce) box Mini Four Cheese Medley
- Non-stick cooking spray
- 1 cup tomato or marinara sauce
- 1/2 cup ricotta cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 egg (lightly beaten)
- 3 teaspoons Italian seasoning
PEANUT BUTTER PORK CURRY

- 2 pork tenderloins (3/4 pound each), cubed
- 1 teaspoon salt, divided
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 1 cup sliced fresh carrots
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 can (14-1/2 ounces) diced tomatoes, drained

- 1 cup cream of coconut or coconut milk
- 1/2 cup creamy peanut butter
- 3 teaspoons curry powder
- 1/4 teaspoon cayenne pepper
- Cooked brown rice
LOBSTER RAVIOLI WITH LEMON CREAM SAUCE

In a mixing bowl using a hook attachment, add the flour and the eggs and mix
- Ravioli Dough
- 3 cups flour
- 4 large eggs, room temperature
- 2 teaspoon olive oil
- pinch of salt
- 1-2 tablespoons of water
- Egg wash (1 egg, lightly beaten)
- On a floured board roll dough until thin. (If you have a pasta machine it’s much easier). cut rolled pasta into 4 inch wide strips.
- Lobster Filling
- 1 pound fresh or frozen lobster tails, thawed
- 4 teaspoons salt, divided
- 1 teaspoon olive oil
- 1 teaspoon unsalted butter
- 1/2 shallot, minced
- 1/2 cup whole milk ricotta cheese
- 1 teaspoon fresh lemon juice
- 3 tablespoons Parmesan cheese, grated
- Salt and fresh ground pepper to taste

CAJUN CHICKEN STROGANOFF

COOK: Cook noodles in a pot of boiling salted water according to package directions; drain
- SAUTÉ:
- 8 oz. dry wide egg noodles
- 8 oz. kielbasa, sliced
- 8 oz. button mushrooms,
- quartered
- 4 Tbsp. olive oil, divided
- COMBINE:
- 11/2 lb. chicken breast tenders
- 1/2 tsp. each cayenne pepper,
- paprika, black pepper, kosher
- salt, dried basil, dried thyme,
- and dried oregano
- 2 Tbsp. all-purpose flour
- 1 Tbsp. tomato paste
- 2 tsp. minced fresh garlic
- DEGLAZE:
- 1/2 cup dry sherry
- 3/4 cup low-sodium
- chicken broth
- 1 Tbsp. Worcestershire sauce
- 1/2 cup sour cream
- Sliced scallions
