Tilapia With Lemmon Butter Sauce

Prep: Chop parsley; cut lemon in half
- 2 tablespoons fresh Italian parsley, coarsely chopped
- 1 lemon
- 1 1/2 lb tilapia fillets (thawed)
- 1 teaspoon seasoned salt
- 4 teaspoons flour, divided
- Large zip-top bag
- 3 tablespoons butter, divided
- 1/4 cup white wine
Easy Guacamole

1.Peel and mash avocados in a medium serving bowl
- 2 avocados
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 ripe tomato, chopped
- 1 lime, juiced
- salt and pepper to taste
Corn Bread Jalapeno Casserole

Preheat oven to 375 degrees
- 2 eggs, beaten
- 1 (14 ounce) can whole kernel corn, do not drain
- 1 (14 ounce) can cream-style corn
- 1/4 cup margarine, melted
- 1 (8 1/2 ounce) box Jiffy cornbread mix
- 3 Jalapenos
- Preheat oven to 375 degrees.
- Finely chop the 3 jalapenos.
- Mix first 3 ingreadients together.
- Add: margarine and Jiffy corn bread mix
- Pour into well greased 8×8 casserole dish.
- Bske for 1 hour at 375 degrees.
Jo Mama's World Famous Spaghetti

In large, heavy stockpot, brown Italian sausage, breaking up as you stir
- 2 lbs Italian sausage, casings removed (mild or hot)
- 1 small onion, chopped (optional)
- 3 -4 garlic cloves, minced
- 1 (28 ounce) can diced tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (15 ounce) cans tomato sauce
- 2 cups water (for a long period of simmering for flavors to meld. If you don't want to simmer it as long, add less)
- 3 teaspoons basil
- 2 teaspoons dried parsley flakes
- 1 1/2 teaspoons brown sugar
- 1 teaspoon salt
- 1/4-1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon fresh coarse ground black pepper
- 1/4 cup red wine (a good Cabernet!)
- 1 lb thin spaghetti
- parmesan cheese
Black Bean Corn Salad

Prep •Remove husks and silks from corn; slice kernels off cob (2–3 cups)
- 4 ears fresh corn
- 1 tablespoon extra-virgin olive oil
- 1 bag fancy romaine salad greens (5–8 oz)
- 2 cups garlic/ginger salad crouton strips
- 1 (15-oz) can black beans, drained and rinsed
- 1/2 cup spicy ranch dressing
- 1 teaspoon dried oregano
French Onion Beef Roast With Rice

1. Preheat large sauté pan on medium-high 2–3 minutes
- 1/4 cup + 2 tablespoons flour, divided
- 1 boneless beef chuck roast (about 3 lbs)
- 1/4 cup canola oil
- 1 (10.5-ounce) can condensed French onion soup
- 1 (1-ounce) packet dry onion soup mix
- 1 (4-ounce) can mushroom pieces (drained)
- 2 pouches boil-in-bag rice
- 2 (14.5-ounce) cans Italian green beans (drain only 1 can)
- 1 tablespoon cooked bacon pieces
- 1/8 teaspoon pepper
- 2 drops liquid smoke flavoring
Garlic Steak With Mushrooms and Onion-Roasted Potatoes

1.Combine in medium bowl, oil, garlic, steak seasoning, and salt
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced garlic
- 1 teaspoon Montreal steak seasoning
- 1/2 teaspoon salt
- 1 1/2 lb top sirloin steak
- 1/3 cup butter
- 8 oz whole baby portabella mushrooms
- 1 (20-oz) package refrigerated red potato wedges
- 1 packet onion soup mix (about 1 oz)
- 2 tablespoons extra-virgin olive oil
Fresh Salsa

1.In a bowl, combine all ingredients; mix well
- 4 cups chopped peeled fresh tomatoes
- 1/4 cup finely chopped onion
- 1 jalapeno pepper, seeded and finely chopped
- 1 tablespoon olive or vegetable oil
- 1 tablespoon vinegar
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 garlic clove, minced
HERSHEY'S Best Brownies

1. Heat oven to 350°F. Grease 9-inch square baking pan
- 1/2 cup (1 stick) butter or margarine, melted
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup all-purpose flour
- 1/3 cup HERSHEY'S Cocoa
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
