- Filling:
- 1/2 lb. asparagus
- 1 lb. medium shrimp
- 6 tbl. margarine
- 1 bunch scallions, chopped
- 6 tbl. flour
- 3 c. cold milk
- 1/2 tsp. salt
- 1/2 tsp coarsley ground black pepper
- 1 tsp. chopped fresh dill or 1/2 tsp. dried dill
- 3/4 c. shredded Parmesan cheese, divided
- Crepes:
- 2 c. flour
- 2 tbl. sugar
- 2 eggs
- 2 c. milk
- 2 tbl. oil

- 1 stick butter
- 2 eggs
- 2 egg yolks
- 1/4 c. flour
- 1/4 c. plus 1 tbl. sugar

Panzanella

Italian tomato and bread crumb salad
- 2 c. bread cubes cut from an artisan loaf
- 1/2 med. sweet onion, sliced very thinly
- 1 garlic clove, peeled
- 2 or 3 flat anchovy filets, packed in oil, chopped fine
- 1 T. capers, drained and rinsed
- 1/2 sweet yellow bell pepper, chopped into 1/4" pieces
- 1/4 c. extra virgin olive oil
- 1 T. quality red wine vinegar
- 3 fresh, firm heirloom tomatoes cut into bite sized pieces
- 1 c. peeled and diced cucumber
- sea salt
- freshly ground pepper
- parmesan cheese shavings
- 1/2 c. loosely packed basil, torn
Gooey Butter Cake

- Cake:
- 1 box Duncan Hines Butter Recipe yellow cake mix
- 1 stick margarine, melted
- 2 eggs
- Topping:
- 1 box confectioners sugar
- 2 eggs
- 8 oz. reduced-fat cream cheese, softened
Jambalaya

One pot spicy rice bowl with vegetables and any combination of chicken/sausage/shrimp
- 1 Tbsp. oil
- 2 lb. boneless skinless chicken thighs
- 1 lb. smoked sausage or sweet or hot Italian sausage or shelled shrimp
- 1 white onion, chopped
- 1 green or red bell pepper, chopped
- 1 c. chopped celery
- 3 garlic cloves, minced
- 2 bay leaves
- 1 Tbsp. creole or Cajun seasoning
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 c. uncooked rice
- 3 c. low salt chicken broth
- 2 cans diced tomatoes

Traditional Nestle Toll House cookies
- 1 1/2 c. shortening
- 1 1/2 c. sugar
- 1 1/2 c. brown sugar
- 4 eggs, beaten
- 2 tsp. baking soda
- 4 1/2 c. flour
- 2 tsp. salt
- 2 tsp. baking powder
- few drops hot water
- 1 large pkg. chocolate morsels
- 2 tsp. vanilla
Pumpkin Muffins with Streusel Topping

Preheat oven to 350 degrees F (175 degrees C)
- 2 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 4 teaspoons pumpkin pie spice *
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 cups pumpkin puree
- 1 cup brown sugar
- 1 cup white sugar
- 2/3 cup vegetable oil
- 1/2 cup applesauce
- 3 eggs
- 1 teaspoon vanilla extract
- 1/4 cup raisins (optional)
- 1/4 cup packed brown sugar
- 2 tablespoons butter, softened
- 2 tablespoons rolled oats
- 2 tablespoons all-purpose flour
- If you don't have pumpkin pie spice, use 2 tsp. ground cinnamon, 1 tsp. ground ginger, 1 tsp. ground allspice and 1/2 tsp. ground nutmeg.
Lemon Viniagrette

Refreshing and easy to make dressing that goes well with seafood dinner salads
- 1/4 c. lemon juice
- 1/4 c. chopped flat-leaf parsley
- 2 cloves garlic, chopped
- 2 tsp. lemon zest
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. extra virgin olive oil
Pecan Balls

Sweet but not too sweet. A Christmas favorite in my family
- 1 c. flour
- 1/2 c. soft butter (1/2 salted, 1/2 unsalted)
- 1 c. finely chopped pecans
- 2 Tbsp. sugar
- 1/4 tsp. salt
- 1 tsp. vanilla
- confectioners sugar
Fried Green Tomatoes

Wash and slice tomatoes into 1/4" slices
- Tomatoes:
- 4 green tomatoes
- salt and pepper to taste
- 3/4 c. flour
- 1 Tbsp. garlic powder
- 4 eggs
- 2 Tbsp. milk
- 1 1/2 c. panko
- pinch cayenne
- pinch paprika
- vegetable oil for frying
- Dipping Sauce:
- 1/2 c. plain yogurt
- 1 c. sour cream
- 1/4 c. horseradish
- 1 tsp. lemon jest
- 2 Tbsp. lemon juice
