- 8 cups mixed greens
- 1 red onion, chopped
- 8 plum tomatoes, quartered
- 1 (8oz) container fresh mini mozzarella balls
Fried Chicken with Cheesy Potato Hash

In a medium pot, combine the potatoes and enough salted water to cover by 1 inch
- 1 1/2 lbs. red potatoes, cut into 1 inch pieces
- 2 large eggs
- 3 slices sourdough bread, finely ground (about 1 1/2 cups)
- 4 chicken cutlets (about 1 pound)
- Salt and pepper
- 1/4 cup olive oil
- 3 cups (about 7 ounces) store-bought coleslaw mix
- 1 red bell pepper, thinly sliced
- 1 bunch scallions, thinly sliced
- 1/3 cup shredded pepper jack cheese

- 4 cloves garlic, minced

- 1 (32-ounce) bag frozen shredded hash brown potatoes, thawed

- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 tablespoons vegetable oil, divided
- 2 cups shredded Cheddar cheese, divided
- 1/4 cup bacon bits, divided
Chicken and Orzo Soup with Arugula and Basil

In a medium soup pot, bring the chicken stock and 2 cups water to a low boil
- 1 - 32 oz. container (4 cups) chicken stock
- 2 Tbl. olive oil
- 3/4 lb. chicken tenders, cut into small pieces
- 2 Tbl. chopped fresh thyme
- 1 bay leaf
- 1 onion, finely chopped
- 1 carrot, grated or finely chopped
- Salt and pepper
- 2/3 cup orzo pasta
- 2 cups arugula, chopped
- 1 cup fresh basil leaves, shredded or torn
- 1 tsp. grated lemon peel

- 1 box (10 oz.) plain couscous (1 1/2 cups)

- 1/4 cup slivered almonds, toasted
