Ramen Noodle Toss

Bring large pot of water to boil
- 2 pkgs. Ramen Noodle Soup
- 1 pkg. 10oz. frozen cut green beans
- 1 red pepper, thinly sliced
- 2 cups sliced cooked chicken
- 2 carrots, shredded
- 1 cup frozen corn kernels
- 1/4 cup teriyaki marinade, preferably with pineapple juice
- 1 Tbl. chopped fresh ginger
- 1 tsp. lime juice
- 1/4 cup canned chow mein noodles
Roast Beef and Endive Salad

Preheat the oven to 400 degrees
- 2 shallots, finely chopped
- 1/2 cup coarsely chopped walnuts
- 3/4 pound thick cut deli roast beef, fat trimmed
- 1/4 pound gruyere cheese
- 5 heads endive
- 1/4 cup chopped fresh parsley
- 3 tablespoons chopped fresh tarragon
- 2 tablespoons dijon mustard
- 2 tablespoons red wine vinegar
- Kosher salt and freshly ground pepper
- 1/2 cup extra-virgin olive oil
- 1/3 cup coarsely chopped dill pickles
Asian Lettuce Wraps

1. 1 head Boston lettuce, leaves separated, cleaned, and dried
- 2 tsp. vegetable oil
- 1 lb. ground beef
- 2-inch piece ginger, peeled and finely grated
- 2 scallions, chopped
- 2 cloves garlic, minced
- 2 Tbl. soy sauce
- 1/4 cup hoisin sauce
- 1/4 cup chopped peanuts
- 1 head Boston lettuce
- salt and freshly ground pepper

1. Using a food processor, chop the garlic
- 4 cloves garlic
- 1/3 cup fresh basil leaves
- 2 Tbl. pine nuts
- 3/4 cup plus 1 Tbl. extra virgin olive oil
- 1 onion, thinly sliced
- 1 lb. ground beef chuck
- 3/4 tsp. crushed red pepper
- salt
- 1/2 pound brie cheese, sliced
- 4 kaiser rolls, split
Chicken Ranch-Style Breakfast Casserole

Preheat oven to 350 degrees
- 2 cups shredded sharp Cheddar cheese, divided
- 1 (8 oz) cream cheese, softened
- 1 cup sour cream
- 1/4 cup butter, melted
- 1 (1 oz) pkg. ranch style salad dressing mix
- 1 (30 oz) pkg. frozen country style hash brown potatoes, thawed
- 1 cup diced cooked chicken
- 8 strips bacon, cooked and crumbled, divided
Homemade Ranch Dressing

Minced the garlic with a knife and then sprinkle on the salt and mash it into a paste with a fork
- 1 clove garlic
- 1/4 tsp. kosher salt
- 1 cup real mayonnaise
- 1/2 cup sour cream
- 1/4 cup Italian flat-leaf parsley leaves, minced
- 2 Tbl. fresh dill, minced
- 1 Tbl. minced fresh chives
- 1 tsp. Worcestershire sauce
- 1/2 tsp. ground black pepper
- 1/2 tsp. white vinegar
- 1/4 tsp. paprika
- 1/8 tsp. cayenne pepper
- Dash hot sauce
- 1/4 to 1/2 cup butter milk (as needed for desired consistency)
Balsamic Strawberries

Boil balsamic vinegar, honey, bay leaf, and salt for 4 minutes
- 1/3 cup balsamic vinegar
- 2 Tbl. honey
- 1 bay leaf
- pinch salt
- 1 cup mascarpone
- 1/2 cup heavy cream
- 1 Tbl. sugar
- 1/4 tsp. vanilla
- 3 pints strawberries, quartered
Nilla Apple Crisp

1. Preheat oven to 350 degrees
- 8 cups thinly sliced peeled Granny Smith apples (about 4 large/2 lb)
- 1/2 cup firmly packed brown sugar, divided
- 2 tsp. ground cinnamon, divided
- 1/3 cup old fashioned or quick cooking oats
- 1/4 cup cold margarine
- 25 Reduced Fat Nilla Wafers, crushed
- 1 1/2 cups thawed Cool Whip Lite Whipped Topping

- Mix together:
- 2 cups brown sugar
- 2 sticks soft butter
- 3 eggs
- 3/4 cup sour cream
- 4 cups flour
- 1/2 tsp. baking powder

Sweet and Spicy Pork Mini-Kabobs

Preheat broiler with rack about 8 inches from heat source
- 24 6-inch bamboo skewers, soaked in water for 30 minutes, drained
- 3 lbs. pork tenderloin, silver skin removed, cut into 48 (1-inch) pieces
- 2 Tbl. chili powder
- 2 tsp. salt
- 1/2 ripe pineapple, peeled, cored, and cut into 24 (1-inch) pieces
- 1 large red bell pepper, cored and cut into 24 (1-inch) pieces
- 2/3 cup honey
- 2 Tbl. balsamic vinegar
