Pork Chow Mein

This is a wonderfully tasty oriental dish
- 1/2 pound lean pork, diced
- 3/4 pound veal, diced
- 1/2 pound lean boneless beef, diced
- 2 tablespoons peanut oil
- 6 tablespoons soy sauce
- 1 cup water
- 1 bunch large celery stalk, cut in ½" pieces
- 1 small red onion, chopped
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 (10 oz. can) sliced water chestnuts
- 2 1/2 cups mung bean sprouts
- 2 ounce canned mushroom
Chimol (Salvadoran Radish Salsa)

A healthy, fresh and delicious salsa that utilizes the wonderful radish
- 1 cup radish, chopped in medium fine dice
- 1 cup tomato, chopped in medium fine dice
- 1/2 cup cilantro, coarsely chopped
- 1/2 cup red onion, finely chopped
- 2 tablespoons fresh lemon juice (to taste)
- salt (to taste)
- NOTE: Some say that you should only use Grape or Cherry tomatoes. They add that extra flavor. If you use them then cut them in eights. (Cut in half then cut each half in forths)
Risotto Milanese

Variations: Risotto with Radicchio (al Radicchio)— Omit the saffron and Parmesan
- 2 1/2 quarts chicken stock
- 4 ounces butter
- 5 ounces onions, minced
- 1 1/2 pounds Arborio rice
- 8 ounces dry white wine
- 1/2 teaspoon saffron threads, crushed
- 4 ounces Parmesan cheese, grated
Pulled Jerk Pork with Carolina Barbecue Sauce

1. In a food processor, whirl all the jerk paste ingredients except the both to a pulpy puree
- JERK PASTE:
- 1 small onion, diced
- 3 scallions, green and white parts, coarsely chopped
- 2 teaspoons salt
- 2 teaspoons freshly ground pepper
- 1 teaspoon ground allspice
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1 scotch bonnet or habanero chile pepper, seeded and quartered, or 1/2 teaspoon cayenne pepper
- 1/2 teaspoon liquid smoke (optional)
- 1 (4-4 1/2-pound) boston butt, with the bone and skin on 1 side
- 1 can (14 1/2 ounces) beef broth
- FOR THE SAUCE:
- 2 cups cider vinegar
- 4 tablespoons sugar
- red-pepper flakes (optional)
- salt and freshly ground pepper

- 1 teaspoon salt

- 2 cups (8 ounces) shredded cheddar cheese

Pantry friendly and adaptable, I just love this stew
- 1 tablespoon oil
- 1 cup onions, chopped
- 1/2 cup mixed sweet and hot peppers, chopped
- 1/2 cup celery
- 1 tablespoon garlic, minced
- 1 1/2 pounds ground beef
- 2 tablespoons all purpose flour
- 1 1/2 cups beef stock or broth
- 3 cans (11.5 ounce) original or spicy V-8, or tomato juice
- 1 can (14.5 ounce) tomatoes, diced
- 2 large potatoes, peeled and diced
- 2 cups fresh carrots, diced (about 2 large)
- 2 cups corn
- 2 cups cut green beans
- Dash Worcestershire sauce
- Couple dashes hot sauce
- 1/4 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste,
- 1 teaspoon of kosher salt, or to taste
- 1/4 teaspoon of freshly cracked black pepper, or to taste
