Easy Cream of Mushroom Soup

Directions: Preheat large pot over medium heat
- 1/4 cup salted butter
- 1 1/2 cups diced onion
- 1 cup diced carrot
- 2 cloves garlic, minced
- 16 oz. button mushrooms, sliced
- 16 oz. cremini mushrooms, sliced
- 6 cups chicken stock
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon thyme
- salt & pepper, to taste
- 1 cup half & half

- 1/2 cup dark corn syrup

- 1 cup mayonnaise-type salad dressing
- 3 tablespoons thousand island salad dressing

- 1/2 cup coarsely chopped shallots (about 1 large)
- 1 tablespoon peeled chopped fresh ginger (about one 1 1/2-inch piece)

- Scant 4 cups dark sweet fresh cherries, pitted and de-stemmed (3 cups afterwards)
- Two 14 1/2-ounce cans diced tomatoes, no salt added (you'll only use 1 1/2 cans; save the rest for another use)
