Broccoli Potato Soup

Place the potatoes, onion, carrot and garlic in a 4 or 5 quart slow cooker
- 1 lb small red potatoes, cubed
- 1 large onion, chopped
- 1 large carrot, coarsely chopped
- 7 garlic cloves, minced
- 3 cups water
- 1 can (14 1/2 ounces) condensed cream of broccoli soup, undiluted
- 1 teaspoon minced thyme
- 1 teaspoon basil
- 1 teaspoon parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon pepper
- 2 cups frozen chopped broccoli, thawed and drained
- 1 cup (4 ounces) shredded Havarti cheese
Italian Chicken Alfredo

Directions Spray the crock of a slow cooker with non-stick cooking spray

- 4 (4 ounce) skinless, boneless chicken breast halves
- 1/4 cup water
- 1 (.7 ounce) package dry Italian-style salad dressing mix
- 1 clove garlic, pressed
- 1 (8 ounce) package cream cheese, softened
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 (4.5 ounce) can chopped canned mushrooms
- 1 (8 ounce) package spaghetti
- 1 tablespoon chopped fresh parsley

- 1 medium eggplant (about 1 lb)
- 1/2 cup dry breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 bottle (8 ounces) fat-free Italian salad dressing
Baked Buffalo Chicken Pasta

Preheat oven to 375 degrees F
- 1 pound pasta (I used whole wheat orecchiette)
- 3 boneless, skinless chicken breasts, cooked and cut into chunks
- 1 tablespoon butter
- 1 tablespoon flour
- 1 1/2 cups milk
- 4 ounces grated monterey jack cheese (I used half a brick) + more for topping
- 1/3 cup grated sharp cheddar cheese + more for topping
- 1/3 cup buffalo wing sauce
- 1/3 cup panko bread crumbs
- salt and pepper to taste
- for garnish: 3/4 cup chopped green onions, 1/2 cup fresh cilantro, 1/2 cup gorgonzola cheese, additional buffalo wing sauce

Spray 5 or 6 quart slow cooker with nonstick cooking spray
- 1 tablespoon olive or vegetable oil
- 1/2 cup chopped onion
- 1 large garlic clove, minced or 2-2 1/2 teaspoons minced
- 2 (26 ounce) jars four cheese-flavored tomato pasta sauce
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried Italian seasoning
- 2 (25 ounce) packages frozen ravioli
- 2 cups (8 ounces) shredded mozzarella cheese
- 1/4 cup chopped fresh parsley

- 1 cup rolled oats
- 1 tablespoon white sugar
- 1 teaspoon brown sugar

In heavy 2-quart saucepan, combine marshmallow creme, margarine and chocolate morsels
- 1 jar (7 oz.) marshmallow creme
- 2 tablespoons margarine and butter
- 1 package (6 oz., 1 cup) semi-sweet chocolate morsels
- 2 cups Rice Krispies®
- 1 package (14 oz.) white chocolate coating
- 2 tablespoons shortening

Begin by preheating the oven to 350 degrees
- 1/2 cup of butter (softened)
- 1/4 tsp of salt
- 1 cup of white sugar
- 1 egg
- 1 1/4 cups of all-purpose flour
- 1/2 tsp of mint extract
- 1/2 cup of unsweetened cocoa powder
- 3 squares of semisweet chocolate (chopped)
- 1/4 cup of butter
Chili & Cheese Macaroni

Preheat the oven to 400 degrees
- 1/2 pound elbow macaroni (about 2 cups uncooked pasta)
- 3 tablespoons vegetable oil
- 1 1/2 pounds ground beef (85% lean)
- 2 medium onions, chopped
- 1 red bell pepper, stemmed, seeded and chopped
- 6 garlic cloves, minced
- 1 1/2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 (28 oz) can crushed tomatoes
- 1 (14.5 oz) can diced tomatoes
- 1 tablespoon light brown sugar
- 12 oz Colby Jack cheese, shredded (about 2 1/2 cups)
