In a large skillet, saute onion and garlic in 2 tablespoons olive oil until crisp-tender
- 1 large onion, chopped
- 4 garlic cloves, minced
- 6 tablespoons olive oil, divided
- 5 cans (15 ounces each) pinto beans, rinsed and drained
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/4 teaspoon pepper
- 1/4 teaspoon hot pepper sauce
- 1 cup (4 ounces) shredded Monterey Jack cheese
Jalapeño Poppers

1. In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits
- 12 ounces cream cheese, softened
- 1 (8 ounce) package shredded Cheddar cheese
- 1 tablespoon bacon bits
- 12 ounces jalapeno peppers, seeded and halved
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup dry bread crumbs
- 2 quarts oil for frying

- 2/3cup powdered sugar
- 1/4teaspoon vanilla
- 2to 3 teaspoons milk
Pumpkin Tiramisu

Line a 9x5-inch loaf pan with plastic wrap
- Filling:
- 4-5 oz package ladyfingers (crispy, not soft)
- 1/2 cup maple syrup (maple flavored syrup is okay to use)
- 2 tablespoons strongly brewed coffee
- 3/4 cup pumpkin puree or canned pumpkin
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp salt
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- Topping:
- 8 oz. mascarpone cheese or cream cheese softened
- 1/4 cup granulated sugar
- 1/2 cup heavy cream

- 1 can (15 1/2 ounces) great northern beans, rinsed and drained
- 1 can (15 ounces) tomato puree
- 1/2 cup finely chopped onion
- 1/2 cup uncooked converted long grain rice
- 2 garlic cloves, minced
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 package (6 ounces) fresh baby spinach, coarsely chopped
- 1/4 cup shredded Parmesan cheese
