- 2 cups brown sugar
- 1/2 cup corn syrup
- 1 tsp. vanilla
- 1/2 tsp. baking soda
Cinnamon French Toast

In shallow dish, whisk together egg, milk, Splenda, vanilla, cinnamon and salt
- 1 egg or 3/4 cup liquid egg
- 1/2 cup skim milk
- 1 tbsp. Splenda
- 1 tsp. vanilla
- 1/2 cup non-fat sugar free fruit yogurt
- 1/2 tsp. ground cinnamon
- pinch salt
- 4 slices stone-ground whole wheat bread

Punjabi Baingan Bharta - Punjabi Style Eggplant

Baingan Ka Bharta requires that the eggplant be roasted
- 3 medium-sized eggplants (roughly 500gms/ 1 pound)
- 2 tbsps vegetable/ sunflower/ canola cooking oil
- 1 tsp cumin seeds
- 2 medium-sized onions chopped fine
- 1 tbsp garlic paste or garlic chopped very fine
- 1 " piece of ginger grated fine
- 2 green chillies (optional but they give the Bharta a nice kick!)
- 2 large tomatoes chopped fine
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- 2 tbsps finely chopped fresh green coriander
Veggie Sushi Bowls

- 1 cup cooked Brown Rice
- 1 teaspoon Rice Vinegar
- 1 sheet Nori Seaweed
- 1/2 Cucumber
- 1 large Carrot

- 1 jalapeno, seeded and minced

- 2 green onions, thinly sliced

- 1 3/4 cup each: 100% bran cereal, quick rolled oats
- 3/4 cup flour
- 1 cup coconut
- 3/4 cup each: packed brown sugar, butter
- 2 tbsp. honey

- 1 square chocolate, melted (optional)
Cabbage Batate Nu Shaak

Heat the oil in a broad non-stick pan and add the mustard seeds, cumin seeds
- 3 cups shredded cabbage
- 1 1/4 cups peeled and cubed potatoes
- 2 tbsp oil
- 2 tsp. curry powder
- 1/4 tsp mustard seeds
- 1/4 tsp cumin seeds
- 2 green chillies , lengthwise
- 1/2 tsp turmeric powder
- salt t o taste
- 1/2 tsp coriander seeds powder

Gouda and Lentil Soup

If desired, pre-cook sweet potatoes or squash
- 1 tbsp. butter
- 1 cup chopped onion
- 1 cup thinly sliced celery or baby spinach leaves
- 4 cups peeled, diced sweet potato (about 2)
- or use butternut squash
- 1 tsp. ground cumin
- 4 cups reduced-sodium chicken broth
- 1 to 2 X 19 oz. can lentils, drained and rinsed (for tick soup, use 2)
- 1 cup shredded Gouda, divided
- or use Gouda with cumin seeds
- salt and pepper to taste
- 1/2 cup grape tomatoes, quartered
Roasted Red Pepper and Squash Soup

Quarter and core peppers. Place in a large roasting pan with squash, onions and garlic
- 3 large red bell peppers
- 8 cups cubed squash
- 1 large onion, cut in wedges
- 3 large garlic cloves, minced
- 3 tbsp. olive oil
- 1 tsp. each dried oregano and thyme
- 1/2 tsp. each salt and pepper
- 3 cups vegetable broth
- 1 cup water
- 1 tbsp. lemon juice
- 2/3 cup plain Greek or Balkan-style yogurt
- 2 tbsp. minced chives, green onion or parsley
Vanilla-Chocolate Meringues
