Zesty Lemon Mousse

In saucepan, sprinkle gelatin over cold water; let stand for 1 minute to soften
- 1 package (7g) Unflavoured gelatin
- 1/4 cup Cold water
- 1 tbsp Grated lemon rind
- 1/2 cup Lemon juice
- 1 cup Granulated sugar
- 2/3 cup Plain yogurt
- 1 cup Whipping cream
Classic Apple Crisp

1. Heat oven to 375 degrees F
- 1-1/2 cups unbleached all-purpose flour
- 1 cup granulated sugar
- 1/3 cup packed brown sugar
- 3/4 tsp. freshly ground cinnamon* or cinnamon
- 1/2 tsp. kosher salt or 1/4 tsp. salt
- 2/3 cup unsalted butter, cut in pieces
- 8 cups peeled apples, sliced 1/2 inch thick
- 2 Tbsp. lemon juice
- 1/4 to 1/3 cup granulated sugar
- 1 Tbsp. unbleached all-purpose flour
- 1/2 tsp. kosher salt or 1/4 tsp. salt
- 1/8 tsp. freshly ground nutmeg **
- Butter for baking dish
- Whipping cream

- Dressing:
- 1 head romaine_lettuce
- 2 cups (500 mL) croutons
- 1/4 cup (50 mL) grated Parmesan cheese
- 1/4 cup (50 mL) vegetable_oil
- 2 tbsp (25 mL) grated Parmesan cheese
- 1 tbsp (15 mL) white_wine_vinegar
- 2 tsp (10 mL) Dijon_mustard
- 2 tsp (10 mL) anchovy_paste
- 2 cloves garlic, minced
- 1/2 tsp (2 mL) each salt and pepper
- 1/2 tsp (2 mL) Worcestershire_sauce
- 3 tbsp (50 mL) light mayonnaise
Kickin' Chicken Chili

1. In a large bowl, toss chicken with cumin and salt to coat
- 2 pounds skinless, boneless chicken breast halves or thighs, cut into 1-inch pieces
- 2 teaspoons ground cumin
- 1/4 teaspoon salt
- 1 tablespoon olive oil or cooking oil
- 1 16-ounce jar green salsa
- 1 16-ounce package frozen pepper stir-fry vegetables (yellow, green, and red sweet peppers, and onion)
- 1 15-ounce can cannellini beans (white kidney beans), rinsed and drained
- 1 14.5-ounce can diced tomatoes with onion and garlic
- Dairy sour cream (optional)
- Shredded cheese (optional)
Brochette of Pork with Lemon and Herb Marinade

Herbs and lemon add tangy flavor to the easy-to-prepare pork dish
- 1 lb boneless lean pork
- Grated rind and juice of 1 lemon
- 2 large cloves garlic, minced
- 2 tsp dried basil (or 2 Tbsp fresh)
- 1 tsp dried thyme (or 1 Tbsp fresh)
- 2 Tbsp chopped fresh parsley
- 1 Tbsp vegetable or olive oil
- 1 sweet green pepper, cut in squares
- 2 onions, quartered and separated into pieces
- 16 cherry tomotatoes, or fresh pineapple chunks
Florentine Lasagna

1. Preheat oven to 375 degrees F
- 12 oz. bulk Italian sausage or turkey Italian sausage
- 1/2 cup chopped onion
- 1 14-1/2-oz. can diced tomatoes, drained
- 1 8-oz. can tomato sauce
- 2 tsp. dried Italian seasoning, crushed
- 6 dried lasagna noodles
- 1 egg, lightly beaten
- 1 15-oz. carton ricotta cheese or 2 cups cottage cheese, drained
- 1/3 cup grated Parmesan cheese
- 1 10-oz. pkg. frozen chopped spinach, thawed and well drained
- 8 oz. sliced mozzarella cheese

Granny's Turkey Dressing

- 1 lb sausage meat
- 2 cups hot mashed potatoes
- 4 cups chopped onions
- 7 cups bread crumbs
- 1/2 tsp salt
- 1/2 tsp seasoning salt
- 1 tsp poultry seasoning
Frozen Vodka Slush

- juice of 2 lemons
- juice of 2 oranges
- one 48oz can of pineapple juice
- one 12oz can frozen Minute Maid grapefruit juice
- one 12oz can of frozen Minute Maid lemonade
- 26 oz Vodka (I prefer Ketel One)
