Mom's Lemon Bread

Beat shortening, sugar, and eggs together
- Glaze:
- 1/2 cup shortening or margarine
- 1 cup sugar
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- grated rind of 1 lemon
- juice of 1 lemon
- 1/4 cup sugar

Swedish Crumb Cake

- 1 cup brown sugar
- 3/4 cup butter
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1 tsp cinnamon

- 3/4 cup sour milk (soured with 2 tsp vinegar)
- 1/4 cup brown sugar

Pepper Jelly Cornmeal Cups

Steak Fajitas with Peppers

1. Trim fat from meat. Partially freeze meat for about 30 minutes
- 12 ounces boneless beef skirt steak or flank steak
- Marinade: 1/3
- cup cooking oil
- 1/3 1/3
- cup lime juice
- 2 fresh jalapeno peppers, seeded and chopped
- 3 tablespoons sliced green onions (2)
- 2 tablespoons snipped fresh cilantro
- 1/4 1/4
- teaspoon salt
- 2 cloves garlic, minced
- 8 8 inches flour tortillas
- 1 tablespoon cooking oil
- 1 medium onion, thinly sliced and separated into rings
- 1 medium red or green sweet pepper, cut into thin strips

Haddock Lobster Bake

Prepare stuffing mixture as directed on box or if making your own: melt butter and saute onions until soft
- box of ready made stuffing mix or make your own:
- 4 haddock fillets: 1 filet of haddock per person
- 1 cup lobster: 1/4 cup of lobster per fillet (can use drained frozen canned lobster)
- 1 cup bread crumbs
- 1/4 cup butter
- 1/4 cup finely chopped onions
- Salt, pepper
SPECIAL DARK Fudge Truffles

Directions 1. Combine chocolate chips and cream in medium microwave-safe bowl
- 2 cups (12-oz. pkg.) HERSHEY'S SPECIAL DARK Chocolate Chips
- 3/4 cup whipping cream
- Various coatings such as toasted chopped pecans, coconut, powdered sugar, cocoa or small candy pieces

- 1 garlic clove, crushed
- 1 Tbsp. chopped fresh lemon rind

Strawberry Bruschetta

This strawberry bruschetta with goat cheese was a perfect quick summer lunch for us
- 1 cup strawberries, hulled and diced
- 1 tbsp. sugar
- 1 French baguette, sliced on a bias
- 4 oz. goat cheese
- 1 tbsp. olive oil
- 2 tsp. balsamic vinegar
- 1/4 cup minced basil leaves
- Freshly ground black pepper
