Oreo Krispie Treats

Crush your Oreos well by placing them in a sealable bag and bashing them with a rolling pin (yes, bashing them)
- 2 packages Oreo cookies
- 1 1/2 bags marshmallows or miniature marshmallows
- 5 tablespoons unsalted butter
Skinny Pumpkin Frappuccino

Mix all ingredients together and top with whipped cream
- 1/2 cup cold coffee
- 1/4 cup unsweetened vanilla almond milk (or any milk)
- 1/4 cup pumpkin purée
- 3 tablespoons pure maple syrup (or equal amount of honey, agave, or 4 packets stevia or other sweetener)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- light whipped cream (optional)

- 3 tablespoons and 1/2 teaspoon butter

- 1-1/2 teaspoons salt

Breakfast Grain Salad with Blueberries, Hazelnuts & Lemon

Mix the oats, quinoa, and millet in a fine mesh strainer and rinse for about a minute under running water
- 1 cup steel-cut oats
- 1 cup golden quinoa
- 1/2 cup millet
- 3 tablespoons olive oil, divided
- 1 inch fresh ginger, peeled and cut into coins
- 2 large lemons, zest and juice
- 1/2 cup maple syrup
- 1 cup Greek yogurt (or soy yogurt, if you want to make this vegan)
- 1/4 teaspoon nutmeg
- 2 cups hazelnuts, roughly chopped and toasted
- 2 cups blueberries or mixed berries
Pork Green Chili Stew

1. In slow cooker pot, heat the olive oil until almost smoking
- 1/4 cup olive oil
- 2 pounds trimmed boneless pork shoulder, cut into cubes
- Salt and freshly ground pepper
- 1 large sweet onion, quartered and sliced
- 1 pound mild green chilies, such as poblanos, halved lengthwise, cored and thinly sliced
- 3 serrano chilies, seeded and sliced
- 6 garlic cloves, sliced
- 2 cups low -sodium chicken broth
- 1/4 cup chopped cilantro
- Lime wedges, warm corn tortillas and rice
