Waldorf Astoria Red Velvet Cake

The original red velvet cake recipe from the Waldorf Astoria, so the story goes! The frosting is divine and a must...
- CAKE:
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 2 ounces red food coloring
- 2 tablespoons cocoa (heaping)
- 1 cup buttermilk
- 2 1/4 cups cake flour
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon vinegar
- FROSTING:
- 3 tablespoons flour
- 1 cup milk
- 1 cup sugar
- 1 teaspoon vanilla
- 1 cup butter (must be butter!)
Red Enchilada Sauce - Ron Miller

This is a homemade red enchilada sauce that Ron Miller made up! It's absolutely fabulous!!!
- 1 large bag of New Mexico dried red chiles - break or cut stems off of chiles (it's okay for the seeds to go into your sauce - you will be straining it).
- Cover with chicken stock
- 3/4 cup chopped sweet onion
Sausage, Cranberry and Apple Stuffing

- 1 loaf sour dough bread, cubed (about 10 cups)
- 1 cup sweetened dried cranberries
- 1 medium apple, peeled, cored and chopped
- 2 (12 oz) Jones Dairy Farm All Natural Pork Sausage Rolls
- 1/2 cup shallots, finely diced
- 1/2 cup pecans, chopped
- 1/2 cup fresh parsley, chopped
- 3 tablespoons fresh sage, finely chopped and divided
- 1 tablespoon fresh rosemary, finely chopped
- 1 teaspoon fresh thyme, chopped
- 1 cup chardonnay wine
- 4 tablespoons unsalted butter
- 2 cups chicken stock
- 2 eggs, lightly beaten
Cool mint oreo cookie balls (Christmas tree styles)

MIX cream cheese and cookie crumbs until well blended
- 6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 1 pkg. (15.25 oz.) OREO Cool Mint Creme Cookies, finely crushed (about 4 cups)
- 2 pkg. (6 squares each) BAKER'S White Chocolate, melted
- 6 drops green food coloring
- 3 Tbsp. green and/or white decorating icings
- 40 cinnamon red hot candies
Jello - Meringue Frosting

- 3 ounce pkg. of Jello (favorite flavor)
- 2/3 cup granulated sugar
- 1 egg white
- 1 teaspoon vanilla
- 1/2 cup BOILING water
Coffee Malt

- Fat free whipped cream

- 2 3/8 cups (450 grams) granulated white sugar
- 6 egg whites
- 1 1/2 tsp vanilla extract

- 1-1/2 lbs ground beef
- 1 cup diced sweet onion
- 1/4 tsp. cumin
- salt to taste
Amazing Pork Tenderloin in the Slow Cooker

Directions Place pork tenderloin in a slow cooker with the contents of the soup packet
- 1 (2 pound) pork tenderloin
- 1 (1 ounce) envelope dry onion soup mix
- 1 cup water
- 3/4 cup red wine
- 3 tablespoons minced garlic
- 3 tablespoons soy sauce
- freshly ground black pepper to taste

1. Dough: Whisk flour, ginger, cinnamon, allspice, baking soda and salt in medium bowl to blend

- 2 1/4 cups all-purpose flour
- 1 Tbsp each ground ginger and cinnamon
- 1 tsp each ground allspice and baking soda
- 1/4 tsp salt
- 1 stick (1/2 cup) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup mild molasses
- 1 large egg yolk
- Coarse white decorating sugar
- Decorations: small jelly beans, candy-hearts, red nonpareils
- Decorating Icing
- 1/2 lb confectioners' sugar (1 1/2 cups plus 2 Tbsp)
- 2 Tbsp Just Whites
