Butternut Squash Soup

This is the soup I made for the Cancer Research potluck - it is so smooth and creamy - yummy!!! One of our favorit...
- 2-1/2 pounds butternut squash, peeled, seeded, and cut into 2-inch chunks
- (about 7 cups)
- 2 tablespoons unsalted butter
- 1 leek, white and light green parts only, quartered lengthwise, sliced thin
- (about 1-1/2 cups)
- 4 cups vegetable broth
- 1-2 cups water
- 2 sprigs fresh thyme
- 1 bay leaf
- Pinch cayenne pepper
Grilled Sweet Potato Fingers

Prepare a charcoal fire, let burn to a gray ash and set grill 8 to 10 inches from coals
- Salt and pepper
- 4 sweet potatoes (about 10 oz. each), peeled
- 2 tablespoons olive oil
- 1/4 teaspoon cayenne pepper

- 3 boneless, skinless chicken breasts
- 1/2 cup honey
- 2 tablespoons corn starch
- 1/4 cup apple cider vinegar
- 1 tablespoon soy sauce
- 1/4 teaspoon ginger
- 1 cube chicken boullion
- 1 large can (20oz.) pineapple chunks or rounds

Bittersweet Chocolate Cake with Berries

- 3/4 cup sugar
- 1/2 cup water
- 1 tablespoon instant espresso coffee powder or 2 tablespoons instant coffee powder
- 3 ounces bittersweet or semisweet chocolate, chopped
- 2 egg yolks
- 1 teaspoon vanilla
- 1/2 cup unsweetened cocoa powder
- 1/3 cup Gold Medal® all-purpose flour
- 1/4 teaspoon baking powder
- 5 egg whites
- Unsweetened cocoa powder (optional)
- 1/2 of an 8-ounce container frozen light whipped dessert topping, thawed

My go-to granola recipe - using applesauce in place of most of the oil saves tons of calories!
- 3 cups rolled oats {old fashioned not quick cooking}
- 1/2 cup roughly chopped unsalted cashews
- 1/2 cup roughly chopped raw peanuts
- 1/4 cup flax seeds
- 2 Tbsp wheat germ
- 1/4 tsp ground cinnamon
- 3/4 tsp kosher salt
- 1/4 cup dark brown sugar
- 1/2 cup plain unsweetened applesauce
- 1/3 cup honey
- 1 tsp vanilla extract
- 1 Tbsp vegetable or canola oil
Breakfast Burritos - Freezer (bulk)

- 2 lbs. bacon, diced
- 2 lbs. breakfast sausage
- 1 large onion, diced small
- 1 cup diced bell pepper (I used frozen diced bell pepper)
- 20 eggs
- 36 fajita sized flour tortillas
- 1 (8 oz.) bag shredded cheddar cheese
