- 2 cups kale, stems removed

Maple Glazed Carrots

Sweet, tender carrots make a perfect side for turkey or brisket
- 2 Tbsp olive oil
- 2 pounds carrots, peeled and cut diagonally into 1/4-inch slices (about 6-1/2 cups)
- 1/2 cup low-sodium chicken or vegetable broth
- 1/2 tsp. seal salt, plus additional to taste
- 2 Tbsp pure maple syrup
- 1 Tbsp organic unsalted butter
- 1-1/2 tsp. chopped fresh flat-leaf parsley

- ~ For the Lemon Cake ~
- 1 1/2 cups cake flour
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 2 1/4 cups sugar
- 8 large eggs, at room temperature
- 1/4 cup grated lemon zest (from about 4 lemons)
- 1/4 cup fresh lemon juice
- 2 cups (4 sticks) unsalted butter, melted and cooled
- 1/2 cup sour cream, at room temperature
- 2 teaspoons pure vanilla extract
- ~ For the Lemon Syrup ~
- 1/3 cup fresh lemon juice
- 1/3 cup sugar
- ~ For the Lemon Glaze ~
- 2 cups confectioners' sugar
- 4-6 Tablespoons fresh lemon juice
Orange Ginger Sesame Dressing

- Ingredients:
- 3-4 cups freshly squeezed orange juice
- Quarter cup of raw, unhulled sesame seeds
- Optional: quarter cup of raw pistacchios
- Quarter cup of chopped green onions or chives
- One small thumb of ginger
- Juice of 1 squeezed lime
- Optional: another herb like cilantro, rosemary, or basil
Zucchini Soup with Crème Fraîche

This ultra-simple soup is a favorite of winemaker Jeremy Seysses and his family
- 2 tablespoon(s) extra-virgin olive oil
- 2 medium onions, coarsely chopped
- 1.75 pound(s) medium zucchini, quartered lengthwise and cut crosswise 1/2-inch thick
- 3 cup(s) vegetable stock
- Salt
- Freshly ground pepper
- 3 tablespoon(s) crème fraîche
- Sherry vinegar, for drizzling
Black Bean Penne Pasta

Cook sausage. Boil pasta as directed
- 7 ounces turkey Italian sausage cut lengthwise and then thinly on the diagonal.
- 1 15 oz. can black beans, drained and rinsed.
- 1 15 oz. can diced tomoatoes
- 1 11 oz. can Rotel mild tomatoes with green chilis (you can leave this out if you don't want it to be spicy)
- 1/2 chopped onion
- 1/2 cup chopped pepper (green and red)
- 1 clove garlic, minced
- 3 cups uncooked penne pasta

* In a large bowl, combine the oats, sugar, baking powder and salt
- 3 * 3 cups quick-cooking oats
- 1 * 1 cup packed brown sugar
- 2 * 2 teaspoons baking powder
