Sweet Potato Biscuits

Preheat oven to 425˚F
- 1 1/4 cups buttermilk
- 1 cup mashed baked sweet potato, at room temperature
- 4 cups self-rising soft-wheat flour (such as White Lily) (My note: I couldn't find White Lily flour, so I used Gold Medal Self-Rising flour)
- 1 Tablespoon baking powder
- 1/8 teaspoon salt
- 1 cup unsalted butter (2 sticks), cut into 1/2-inch cubes and chilled
- Parchment paper
Pineapple Chicken Kabob Packettes

1. Heat gas or charcoal grill
- 1/3 cup pineapple preserves
- 2 tablespoons packed brown sugar
- 1 tablespoon soy sauce
- 1/4 teaspoon crushed red pepper
- 4 boneless skinless chicken breasts, cut into 2-inch cubes (1 lb)
- 1 medium red bell pepper, cut into 1 1/2-inch cubes

- FROSTING:
- 3/4 cup butter, softened
