Pierogi (basic)

This recipe includes potato, blueberry and Italian plum fillings
- For potato:
- 1 * 1 large egg
- 2 * 2 tablespoons sour cream
- 1 * 1 cup milk
- 1 * 1 cup water
- 4 1/2 to 5 * 4 1/2 to 5 cups all-purpose flour, plus more for dusting
- 5 * 5 pounds (about 10 medium) baking potatoes, peeled and quartered
- 12 * 12 tablespoons (1 1/2 sticks) unsalted butter, melted
- 2 * 2 ounces cheddar cheese, (about 1/2 cup), grated
- 4 * 4 ounces cream cheese
- * Coarse salt and freshly ground pepper
- 2 * 2 tablespoons cornmeal
- Blueberry filling:
- Crush 2 cups (1 pint) blueberries with your hands. Toss with 6 cups (3 pints) whole blueberries and 1 cup sugar. For each pierogi use 1 tablespoon plus 2 teaspoons filling. Serve with spiced sour crea
- Italian Plum filling:
- (small apricots can also be used).
- Cut a slit into (but not through) each of 24 small Italian plums; remove pits. Fill cavity of each plum with 1/4 tsp. sugar. Close plum before wrapping in dough. Use 1 plum for each pierogi.
- Serve with spiced sour cream (recipe below).
- Spiced sour cream:
- mix together 1 cup sour cream, 3 tablespoons confectioners' sugar, 1/2 tsp. pure vanilla extract, and 1/4 tsp freshly grated nutmeg. Serve chilled. Makes 1 cup.

- STIFF:
- 1 tsp clear vanilla extract*
- 2 tbsp Water
- 1 cup shortening
- 1 tbsp Wilton Meringue Powder
- 1 lb (4 cups) sifted powdered sugar
- MEDIUM:
- 1 tbsp additional water
- THIN:
- 2 tbsp additional water
Black Bean Penne Pasta

- 7 ozs of turkey kielbasa cut lengthwise and then thinly on the diagonal (you can always add more if you have bigger meat eaters).
- 1 can of black beans, drained and rinsed,
- 1 can of diced tomatoes
- 1 can of Rotel (I use the original but if you don't like spice then you could use mild)
- 1/2 chopped onion
- 1/2 cup chopped pepper (I used green and red)
- 1 clove garlic minced
- 1 tsp Cajun Seasoning
- 3 cups uncooked penne pasta.
Chocolate Cupcake with Whipped Cream Icing

A lighter version of a chocolate cupcake
- 1 1/4 c all-purpose flour
- 3/4 c granulated sugar
- 1/4 c unsweetened cocoa powder
- 1 tsp baking soda
- 1/8 tsp salt
- 1/2 c water
- 1/2 c fat-free plain yogurt
- 1/4 c vegetable oil
- 1/4 c unsweetened applesauce
- 1 egg white
- 1/2 tsp instant coffee, dissolved in 2 tbsp hot water
- 1 1/2 tsp vanilla extract
- 1/2 c + 2 tbsp heavy cream
- 2 oz reduced-fat cream cheese (Neufchatel)
- 1/4 c confectioners' sugar
- 2-3 drops red food coloring (optional)
Butternut Squash and Apples

Cut squash in halves, remove seeds and fiber; peel and cut in slices 1/2 to 3/4 inch thick
- 3 lbs. butternut squash
- 3 baking apples
- 6 tbsp. butter or reg. butter
- 2/3 c. brown sugar, firmly packed
- 1 1/2 tbsp. flour
- 1 1/4 tsp. salt

- 1 cup (150 g) frozen pineapple
- 1 (118 g) ripe banana, peeled

- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract (best quality available)
- 1 cup boiling water
- Peanut Butter Frosting
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 cup smooth peanut butter (chose a peanut butter with no added sugar)
- 1 (8-ounce) package cream cheese
- 4 cups powdered sugar
- 1 tablespoon heavy cream (or milk)
