- 4 ounces good bacon or pancetta, diced
- 1 (3 to 4-pound) chicken, cut in 8ths
- Kosher salt and freshly ground black pepper

- 3/4 * 3/4 teaspoon kosher salt
- 2 * 2 eggs, room temperature
- 1 1/4 * 1 1/4 cups whole milk, room temperature
- 1 * 1 tablespoon lightly salted butter, melted, plus additional for greasing the molds
No Roll Apple Pie Crust

Directions I made a simple syrup (1 cup each of sugar and water) and boiled until sugar dissolved

- 1 cup sugar
- 1 cup water
- 1/2 cup Triple Sec
- 1/2 cup Brandy
- 1/2 bottle Chianti or red wine
- Fruit - peeled peaches, oranges, blueberries, plums, raspberries, strawberries, etc.

- 2 cups soft unseeded rye bread crumbs
- 1 can (16 ounces) sauerkraut, drained
- 2 eggs, lightly beaten
- 1/2 cup milk
- 1/2 cup chopped onion
- 1 teaspoon caraway seeds
- 1/2 teaspoon ground pepper
- 2 tablespoons ketchup or chili sauce
- 2 pounds lean ground beef
