To boil shrimp: 1.Rinse shrimp in water 2
- 3 pounds shrimp
- 4 Tbs pastured butter
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- 2 tsp salt
- 8 cups water (or 4 cups water and 4 cups chicken stock)
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped bell pepper
- 1 Tbs bpa-free tomato paste
- 5 cups cream – raw if possible
- 1 cup chopped tomato
- 1/4 cup brandy
Lemonade Base

- 2 1/2 cups water
- 1 1/4 cups sugar
- 1/2 teaspoon shredded peel
- 1 1/4 cup fresh lemon juice
King Ranch Chicken Casserole

1. If applicable, remove giblets from chicken, and reserve for another use
- 1 (4 1/2- to 5-lb. ) whole chicken
- 2 celery ribs, cut into 3 pieces each
- 2 carrots, cut into 3 pieces each
- 2 1/2 to 3 tsp. salt
- 2 tablespoons butter
- 1 medium onion, chopped
- 1 medium-size green bell pepper, chopped
- 1 garlic clove, pressed
- 1 (10 3/4-oz.) can cream of mushroom soup
- 1 (10 3/4-oz.) can cream of chicken soup

- 3 cups grated sharp Cheddar cheese
- 12 (6-inch) fajita-size corn tortillas, cut into 1/2-inch strips

Preheat oven to 350° F. and butter a 10-inch cake pan
- 1 3/4 sticks (7/8 cup) unsalted butter
- 7 ounces (1 1/4 cups) blanched whole almonds
- 6 ounces fine-quality bittersweet chocolate (not unsweetened)
- 4 large eggs
- 1 cup granulated sugar
- Garnish: confectioners' sugar
- Accompaniment: whipped cream

World's Best Lasagna

1.In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned
- 1 pound sweet Italian sausage
- 3/4 pound lean ground beef
- 1/2 cup minced onion
- 2 cloves garlic, crushed
- 1 (28 ounce) can crushed tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (6.5 ounce) cans canned tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar
- 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon fennel seeds
- 1 teaspoon Italian seasoning
- 1 tablespoon salt
- 1/4 teaspoon ground black pepper
- 4 tablespoons chopped fresh parsley
- 12 lasagna noodles (10 will work for us)
- 16 ounces ricotta cheese (this should be doubled - buy 30 oz)
- 1 egg
- 1/2 teaspoon salt
- 3/4 pound mozzarella cheese, sliced (double - buy 1.5 lb bag shredded)

- 1 blood orange, Cara Cara orange, or regular orange
- 1/2 cup 1/3-inch cubes avocado
- 1/3 cup chopped red onion
- 2 teaspoons minced red jalapeño
- 2 teaspoons fresh lime juice
- 2 teaspoons olive oil
- 2 6-ounce mahi-mahi fillets

These classic pleated Chinese dumplings are delicious either steamed or fried
- For dough:
- 2 cups all-purpose flour
- 3/4 teaspoon salt
- For filling:
- 2 teaspoons dried shrimp
- 2 taspoons Chinese rice wine, such as Shaoxing, or medium-dry Sherry
- 6 ounces cabbage (1/4 medium head), roughly chopped
- 1/2 teaspoon kosher salt
- 1 pound ground pork
- 1 bunch golden or green garlic chives, finely chopped (1/2 cup)
- 2 scallions (green parts only), thinly sliced on the diagonal
- 1 clove garlic, finely chopped
- 1/8 teaspoon fresh ginger, finely grated
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- 1/2 teaspoon Asian sesame oil
- 1 large egg, beaten
- 1/4 teaspoon freshly ground black pepper
- 1 heaping tablespoon cornstarch
- For frying:
- 4 1/2 tablespoons vegetable oil
- For dipping sauce:
- 1/4 cup soy sauce
- 1/3 cup unseasoned rice vinegar
- 1 teaspoon Sriracha (Southeast Asian chile sauce)
- 1 scallion (green part only), thinly sliced on the diagonal
