- 3 1/2 to 4 lb whole chicken, cleaned and thawed
- 12 oz can of beer
- Poultry rub
- Potato or onion (to plug neck cavity)
- Optional: Minced garlic, minced onion, liquid smoke, Worcester sauce, etc.
Prosciutto Wrapped Grilled Figs with Mozzarella and Rosemary Oil

Preheat gas or charcoal grill to high
- Rosemary Oil:
- 1/2 cup fresh rosemary leaves
- 2 tablespoons coarsely chopped chives
- 1 cup olive oil
- Kosher salt and freshly ground pepper
- Figs:
- 8 fresh figs, halved lengthwise
- 16 slices buffalo mozzarella, about 2 inch squares
- 16 slices thin prosciutto
- 16 toothpicks, soaked in water for one hour
- Kosher salt and freshly ground pepper
- 1 cup rosemary oil
Shara's Breakfast Casserole

Brown sausage; drain; place in bottom of casserole dish
- Optional:
- 1 lb breakfast sausage
- 8-12 slices of bread with crusts removed - cubed
- 1/2 to 3/4 cup butter - melted
- 5 to 6 eggs
- 2 cups milk
- 1 package shredded cheddar cheese
- Pepper
- Green pepper, onion, mushrooms

- 1-2 teaspoons salt

California Spot Prawns with Thai Seasoning

The California spot prawn is unusually large, meaty and sweet, which is why it has become such a chef's favorite
- 3 1/2 tablespoons fresh lime juice
- 2 tablespoons grapeseed or vegetable oil
- 2 tablespoons light brown sugar
- 2 kaffir lime leaves or 1-inch-wide strips of lime zest
- 1 stalk of lemongrass, bottom 6 inches only, peeled and minced
- 1 tablespoon minced fresh ginger
- 1 teaspoon Asian fish sauce
- 16 large California spot prawns or shrimp (about 1 pound), shelled and deveined
- 1/2 medium seedless cucumber, peeled and coarsely shredded
- 1/2 cup plain whole-milk yogurt
- 1 teaspoon minced shallot
- 1/4 teaspoon ground coriander
- Pinch of cayenne pepper
- 2 small garlic cloves, minced
- 2 tablespoons finely chopped mint
- 3 tablespoons very finely chopped cilantro
- 1 teaspoon finely grated lime zest
- Salt and freshly ground pepper
- 1 Charentais melon or 1/2 cantaloupe, rind removed, melon sliced 1/2 inch thick
- 2 Hass avocados
- 3 tablespoons minced red onion
- 1/2 teaspoon minced hot chile

- 1 3/4 cups reduced-sodium chicken broth (14 fl oz)
- 2 tablespoons finely chopped shallot
- 5 tablespoons unsalted butter
- 10 oz mushrooms, trimmed and thinly sliced
- 1 1/2 teaspoons finely chopped fresh sage
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup all-purpose flour
- 4 skinless boneless chicken breast halves (2 lb total)
- 2 tablespoons extra-virgin olive oil
- 1/2 cup plus 2 tablespoons dry Marsala wine

- 4 pounds fatty pork shoulder, cut into 2-inch pieces
- 3 cups water
- 1 medium white onion, thinly sliced
- 1/2 orange, cut into 2 pieces
- 1/4 cup pork lard or vegetable oil
- 8 garlic cloves, peeled
- 3 bay leaves
- 1 tablespoon sweetened condensed milk
- 2 teaspoons dried oregano, preferably Mexican, crumbled
- 2 teaspoons fine salt, or 4 teaspoons kosher salt
Pan-Grilled Salmon on Toast with Scallion Mayonnaise

Heat grill pan over moderately high heat until hot but not smoking
- 6 scallions
- 4 teaspoons olive oil
- 1 pound salmon fillet (about 1 1/2 inches thick), skinned and bones removed
- 1/4 cup mayonnaise
- 1/3 cup finely chopped celery
- 2 teaspoons fresh lemon juice
- 1 1/2 teaspoons chopped fresh mint leaves
- 4 (1/2-inch-thick) slices good-quality whole-wheat bread
- 2 cups bite-size pieces frisée or mesclun (1 ounce)
- Special equipment: a well-seasoned ridged grill pan (preferably cast-iron)
- Accompaniment: lemon wedges

Add ingredients beans through basil to crock pot with just enough water to keep the beans covered
- 1 lb red beans - washed
- 1/4 cup dry onions or 1/2 cup fresh
- 1/8 cup minced garlic - dry or fresh
- 2 teaspoons oregano
- 1/3 cup parsley
- 1/8 teaspoon cumin
- 2 tablespoons cayenne pepper (or less)
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1/2 teaspoon crushed red pepper (or less)
- 1/8 teaspoon cilantro (dried or fresh)
- 1 teaspoon chervil (can omit - then add more parsley)
- 1/4 to 1/2 teaspoon thyme
- 2 tablespoons basil
- 1 lb smoked sausage (Hillshire Farms)
- 2 tablespoons Filé (Gumbo Filé)
- 1 teaspoon liquid smoke
