Chile con Queso

Saute onion and garlic in butter until soft
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 2 tablespoons butter or margarine
- 1 large tomato, finely chopped
- 1/2 cup Hatch Green Chile, roasted, peeled, seeded and chopped
- 1/2 teaspoon oregano
- 3/4 teaspoon salt
- 1 pound cheddar or American cheese, grated
Sour Cream Enchiladas

Combine all but the cheese and meat
- 1 pound hamburger, browned and drained
- 2 cans cream of chicken soup
- 3/4 cup sour cream
- 4 oz can diced green chilies
- 1/2 cup green onion chopped
- 3/4 cup evaporated milk
- 1 tablespoon vinegar
- 2 cups grated cheddar cheese
- Tortillas or tortilla chips
Murray's Sausage & Peppers

This can be varied quite a bit - just throw in whatever you have around the kitchen
- 1 lb Italian sausage links
- 1 sliced red pepper
- 1 sliced yellow pepper
- 1-2 sliced yellow onions
- 1 small can diced tomatoes
- 1/2 can tomato paste
- 4-6 cloves of garlic, diced
- 2 pinches of dried oregano
- handful of chopped fresh basil
- couple pours of cheap marsala (around a cup)
- pinch of red pepper flakes
- salt & pepper to taste
- provolone cheese slices
- Italian bread or sweet rolls.
Homemade Applesauce

Preheat the oven to 350 degrees F
- 2 large navel oranges, zested and juiced
- 1 lemon, zested and juiced
- 3 pounds Granny Smith apples (about 6 to 8 apples)
- 3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
- 1/2 cup light brown sugar, packed
- 4 tablespoons unsalted butter
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
Green Peppercorn Sauce

Boil broth in saucepan until reduced to 1½ cups, about 7 minutes
- 3 ½ cups beef broth
- 2 tablespoons butter +
- ½ cup chopped shallots
- 2 cups whipping cream
- 6 tablespoons Cognac or Brandy
