- Yogurt sauce:
- 1 cup plain low-fat yogurt
- 2 tablespoons tahini (sesame seed paste)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- Köfte:
- 2 pounds ground lamb
- 1/2 cup minced fresh mint
- 1/4 cup coarsely grated onion
- 4 garlic cloves, minced
- 3 tablespoons paprika
- 1 tablespoon ground cumin
- 11/2 teaspoons coarse kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon cayenne pepper
- 12 5-to 7-inch-diameter soft round Middle Eastern flatbreads (preferably with no pocket)
- 2 tablespoons (or more) olive oil, divided
- 2 large onions, halved through core, cut crosswise into 1/4- to 1/3-inch slices
- Muhammara:
- 1/2 cup finely chopped drained roasted red peppers from jar
- 1/2 cup water
- 2 tablespoons (or more) pomegranate molasses
- 2 tablespoons chopped fresh Italian parsley
Coq Au Vin

1. Wash and thoroughly pat dry chicken pieces
- 1 Stewing Chicken, 6 to 8 lbs, cut into serving pieces
- 6 ounces thick bacon, sliced into ½ inch pieces
- 2 dozen pearl onions, peeled (boil for a few minutes to easily peel)
- 8 ounces mushrooms
- Olive oil, or unsalted butter
- Salt and freshly ground pepper
- ¼ cup Cognac (optional)
- 1 bottle (750ml) Burgundy wine
- 1 yellow onion, chopped
- 1 stalk celery, chopped
- 2 carrots, chopped
- 1 clove garlic
- Bouquet garni (several springs each of parsley and thyme, a bay leaf, some celery leaves, sage and whatever is on hand tied in a bundle with twine or wrapped in a piece of cheesecloth
- 2 cups chicken stock reduced from 4 cups, or veal demi-glace

1. Soak the dry mushrooms in 1 cup of warm water for 20 to 30 minutes, until plump
- 1 ounce dried mushrooms (porcini, morels, or shitakes)
- 1/2 cup olive oil
- 2 sprigs of rosemary
- 4 sprigs of sage
- 1 large yellow onion, peeled and thinly sliced
- 3 garlic cloves, peeled and thinly sliced
- 1 1/2 teaspoons salt
- 1/4 tsp freshly ground white pepper
- 1 pound white button mushrooms, cleaned and thinly sliced
- 1 pound shitake mushrooms stemmed, cleaned and thinly sliced
- 6 cups chicken stock or water
- 1 cup heavy cream
- 2 tablespoons unsalted butter
