Spiced Semifreddo

This frozen mousse-like dessert does not require an ice cream maker to prepare
- 4 large egg whites
- Pinch salt
- 1/2 cup (125 mL) icing sugar, sifted
- 2 cups (500 mL) whipping cream
- 1/2 cup (125 mL) pure maple syrup
- 2 tbsp (25 mL) fancy molasses
- 1 tsp (5 mL) vanilla extract
- 2 tsp (10 mL) ground ginger
- 1/2 tsp (2 mL) ground cinnamon
- 1/4 tsp (1 mL) ground allspice
- 18 to 24 Maple Gingerbread Cut-Out Cookies
Grilled porcini mushroom burgers

1. Place mushrooms in a small bowl; cover with boiling water
- 1 ounce dried porcini mushrooms
- 2 pounds extra lean ground beef
- 1/4 cup snipped fresh basil
- 1 teaspoon snipped fresh thyme
- 1-1/2 teaspoon kosher salt
- 1 teaspoon freshly ground pepper
- 1 to 2 tablespoons purchased garlic-flavored olive oil

Indian Spiced Turkey Burgers

- 1/4 cup milk
- 1 large egg
- 1 slice sandwich bread processed to crumbs or torn into small pieces*
- 3 tbsp mango chutney (such as Major Grey)
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp minced garlic
- 1/2 tsp ginger powder
- 1/4 tsp salt
- 1/8 tsp white or black pepper
- Pinch allspice
- 1-1/2 lb. ground turkey
- 1/3 cup finely chopped green onion
- 6 or 7 hamburger buns
