Pat's Broccoli and Chicken Stir-Fry

- 2 tablespoons soy sauce
- 1 tablespoon orange juice
- 1 tablespoon rice wine vinegar
- 1 tablespoon light brown sugar
- 1/2 tablespoon sesame oil
- 1/2 tablespoon red pepper flakes, plus more to taste, if desired
- 1/2 tablespoon cornstarch
- 1 tablespoon peanut oil, plus more as needed
- 1 pound boneless, skinless chicken thighs, cut into 1/2-inch pieces
- 4 cloves garlic, minced
- 2 tablespoons peeled and chopped ginger
- 4 green onions, sliced
- 2 cups broccoli florets, blanched
Bean Dip

Directions: Combine ingredients in a saucepan and place on your stove over low heat
- Ingredients:
- 2 cans Fritos Bean Dip, Original
- 1 cup sour cream
- 1 cup shredded colby jack or cheddar cheese
Meat Loaf

Soak bread crumbs in milk and mix in egg
- 1 1/4 ground beef
- 1 1/4 ground pork
- 2 cups bread crumbs
- 1 cup yellow onion
- 1 tsp Worcestershire sauce
- 1 tsp garlic
- squirt mustard
- Kosher Salt and Pepper
- 1-2 Eggs

Chocolate Sticky Buns

1 Melt butter in a medium saucepan over medium-low heat
- 1/4 cup butter
- 1/4 cup light corn syrup
- 3/4 cup brown sugar
- 2 1/2 tablespoons unsweetened cocoa powder
- 1/4 cup chopped pecans
- 1/3 (48-ounce) package frozen bread dough, thawed
- 1 tablespoon butter, melted
- 1 1/2 tablespoons sugar
- 3/4 teaspoon unsweetened cocoa powder
- 1/4 teaspoon ground cinnamon
Pepper Sauce

In medium saucepan over med high heat, saute chicken in oil until brown on all sides
- Faux Veal Stock - Can be used for both sauces.

- 2 pounds chicken thighs or drumsticks

- 1 cup carrot, large dice

- 4 tbsp butter
- 1/4 cup flour

- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt

- 1/2 cup dairy sour cream

Shrimp Scampi with Linguini

- 5 1/2 Tbsp Apple Cider Vinegar
- 4 Tbsp Sugar
- 1 1/2 Tbsp Prepared mustard
- 1/2 Tbsp Minced Shallots
- 1/2 Tbsp Minced Onion
- Dash Salt and Pepper
Peanut Brittle with Chocolate

1. Combine baking soda, water and vanilla in a small bowl
- + 3/4 C sugar
- + 3/4 C corn syrup
- + 1 oz. water
- + 1 t salt
- + 2 oz. butter
- + 1/2 t baking soda
- + 1 t water
- + 1 t vanilla
- + 4 oz. nuts, chopped (While you can make brittle with any roasted, salted nut, the chef says she found out by accident that Planters dry-roasted peanuts make things extra tasty—imparting a flavor much like salted caramel)
- + Chocolate for coating (coating chocolate has a higher percentage of cocoa butter and is much smoother as a result. Stapleton prefers Choco Vic chocolates
