Roasted Jalapeno Poppers

- 12 large jalapeno peppers
- 2 ounces feta cheese
- 4 ounces cream cheese, at room temperature
- 4 ounces shredded smoked pepper Jack cheese, or other hot pepper cheese, or extra-sharp Cheddar
- A small handful fresh cilantro, finely chopped
- 2 tablespoons grated onion

Yields: 8 cocktails Preparation In a pitcher, combine the tequila, limonada and orange liqueur
- 1 1/2 cups Sauza Tres Generaciones tequila (100% agave resposado or Sauza Commemorative - a lighter-style Anejo)
- 2 1/2 cups limonada (1 cup fresh lime juice mixed with 1/2 cup of sugar and 1 1/2 cups water will yield 2 3/4 cups, a little more than you need)
- 1/2 cup Torres orange liqueur
- 1 lime wedge
- Coarse (Kosher) salt
