- 1 bag dried pinto beans (1/4 cup dry)
- 4 Tbsp cumin powder
- 1/2 tsp red chili pepper flakes
- 3 tsp paprika
- 3 tsp garlic powder
- 2 Tbsp olive oil
- 1 large onion, diced
- 1 tomato, diced
- 5 cloves garlic, minced
- 1 fresh pepper, diced
- 2 bunches fresh cilantro, chopped
- 1 package taco seasoning
Ginger-Chocolate Crunch Pumpkin Pie

1. Preheat oven to 350 degrees F
- 1 15 - ounce can pumpkin
- 1/3 cup sugar or sugar substitute* equivalent to 1/3 cup sugar
- 2 tablespoons honey or pure maple syrup
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 3/4 cup evaporated fat-free milk

- 8 gingersnaps
- 2 ounces dark or bittersweet chocolate (60 to 70% cacao)

1 Heat oven to 300°F. On large cookie sheet, spread bread cubes
- 10 cups cubed (3/4-inch) French or challah bread
- 8 eggs
- 2 cups (1 pint) half-and-half
- 1/2 cup milk
- 1/3 cup packed light brown sugar
- 1 1/2 teaspoons vanilla
- 1/2 teaspoon ground cinnamon

- 1 x8 oz pkg firm tofu, drained and cut into bite size pieces
- 2 whole cloves
- 2 whole black peppercorns
- 1/2 stick cinnamon
- 3 large cloves garlic, minced
- 1 piece fresh ginger (1"), peeled and grated
- 1 medium onion, finely chopped
- 1 tsp ground turmeric
- 1 tsp garam masala
- 1/8 tsp ground red pepper, or to taste
- salt to taste
- 1 x10 pkg frozen peas
- 3/4 cup plain fat free yogurt
- 1 Tbsp cornstarch
- 2 Tbsp chopped frsh cilantro (optional)

- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, chopped
- 1 14 1/2 ounce can diced tomatoes with basil, garlic and oregano
- 4 cups vegetable broth (can also use 2 14 1/2 ounce cans reduced-sodium chicken broth)
- 8 ounce (about 2 cups) small pasta shells
- 1 teaspoon Italian seasoning
- 1 bunch fresh kale, tough stems discarded, cut into 1-inch pieces and washed
- 2 cans small white beans, drained and rinsed
- 1 tablespoon tomato paste
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Grated Parmesan, for serving

- STEP 1 INGREDIENTS:
- 1 cup uncooked quinoa (if not pre-rinsed put in a mesh strainer and run cold water over it for about 30 seconds)
- 2 cups vegetable broth
- 1/4 cup dried currants
- 1 tsp medium curry powder
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1 tsp honey (or sugar)
- 1/2 tsp salt
- STEP 2 INGREDIENTS:
- 1 cup canned chickpeas, drained and rinsed
- 1/2 cup each - finely chopped red bell pepper, grated carrots (packed), diced English cucumber (peeled)
- 1/3 cup chopped green onions
- 2 Tbsp olive oil
- 2 Tbsp freshly squeezed lemon juice
- 2 Tbsp minced fresh mint leaves
- Lots of freshly ground black pepper
