Cheese & Onion Enchiladas with Tex-Mex Chili Gravy

This Tex-Mex dish is so easy to make, and you probably have most of the ingredients on hand
- The Chili Gravy
- Makes 2 cups
- 1/4 c vegetable oil (I used organic canola)
- 1/4 c all-purpose flour
- 1/2 tsp ground black pepper
- 1 tsp sea salt
- 1-1/2 tsp powdered garlic
- 2 tsp ground cumin
- 1/2 tsp dried oregano
- 2 T chili powder
- 2 c low-sodium chicken broth
- The Enchiladas
- 3-4 T olive oil
- 8 white corn tortillas
- 3-1/2 cups shredded cheddar cheese (reserve 1/2c or so to top enchiladas)
- medium onion, diced

Jell-O Blood Worms

- 100 flexible plastic straws
- (The straws with a bendable neck make the most realistic worms by adding ridges to the worm. Place bendable necks of straws at the bottom of the container).
- an empty, cleaned 1-quart milk or orange juice carton to hold straws.
- (The straws will fill up to the height of the container, the taller the better.)
- 1 package (6 ounces) raspberry flavor gelatin
- 3 envelopes unflavored gelatin
- 3 cups boiling water
- 3/4 cup whipping cream
- 12 to 15 drops green food coloring

- 1 (14 1/2 ounce) can whole canned tomatoes (plus the juice)
- 4 teaspoons jalapenos (canned,diced, not pickled)
- 1/4 cup yellow onion (diced)
- 1/2-3/4 teaspoon garlic salt
- 1/2 teaspoon cumin
- 1/4 teaspoon sugar

In a large mixing bowl, dissolve yeast in warm water
- 2 packages of active dry yeast, (2 scant Tbls)
- 1/4 warm water (110-115 degrees)
- 2 cups warm milk (110-115 deg)
- 2 tablespoon sugar
- 1 tablespoon shortening
- 2 teaspoon salt
- 6 1/4-6 1/2 cups all purpose or bread flour
- 1/2 cup butter
- 1 Tablespoons dried parsley
- 2 teaspoons garlic powder

Combine the warm milk, sugar and yeast, allowing the yeast to proof for a few minutes, until bubbly
- 1 3/4 cups (14 ounces) milk, warm {I use powdered milk}
- 3 tablespoons butter
- 1 1/4 teaspoons salt
- 2 tablespoons granulated sugar
- 1 large egg, lightly beaten
- 4 to 4 1/4 cups flour {I used whole wheat}
- 2 teaspoons instant yeast
- 1 tsp baking powder
Lasagna Stoup

In a soup pot, heat the EVOO over medium-high heat
- 2 * 2 tablespoons extra virgin olive oil (EVOO)
- 1 * 1 pound ground beef sirloin
- * Salt and pepper
- 1 * 1 large onion, finely chopped
- 2 * 2 carrots, peeled and grated
- 3-4 * 3-4 cloves garlic, finely chopped
- 4 * 4 cups chicken broth (32 ounces)
- 1 * 1 can Italian crushed tomatoes (28 ounces)
- 1 * 1 pound lasagna noodles, broken into jagged pieces
