Apple Oat Crisp

Preheat oven to 375 degrees
- Oat topping:
- 1/4 c. sugar
- 2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- Pinch salt
- 4 lbs. tart apples (Granny Smith, Jonathan), peeled & cut into 8 wedges each
- 2 tsp. lemon juice
- 2/3 c. all-purpose flour
- 2/3 c. packed brown sugar
- 1/2 c. butter, cut-up
- 2/3 c. rolled oats, uncooked
- 2/3 c. chopped pecans
Stir-Fry

In a bowl, combine the chicken, garlic, soy sauce, hoisin and hot sauce
- 12-oz. chicken breast
- 1/2 tsp. GRANULATED GARLIC POWDER
- 1-2 TB. soy sauce (we used reduced sodium)
- 1-2 TB. hoisin sauce
- 1-2 tsp. sriracha or your favorite hot sauce, to taste
- 2-4 TB. oil, divided
- 1 medium onion, chopped
- 2 garlic cloves, chopped (1/2 tsp. PENZEYS MINCED GARLIC)
- 2 carrots, peeled and sliced into coins
- 1 Cup broccoli, cut into florets
- 1 small zucchini, sliced
- 1/2 Cup chopped tomatoes, 1 medium or a dozen grape tomatoes
- 1 small head bok choy, chopped
- 1-2 tsp. soy sauce
- 1-2 tsp. hoisin sauce
- 1 tsp. sesame oil
Pesto Chicken Sandwiches

In a small bowl combine Italian seasoning, salt, and black pepper
- 1 teaspoon dried Italian seasoning, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pound skinless, boneless chicken breast halves
- 1 large onion, thinly sliced
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 14 1/2 ounce can diced tomatoes, undrained
- 2 tablespoons red wine vinegar
- 1 medium zucchini or yellow summer squash, halved lengthwise and sliced 1/4 inch thick
- 1 large red, yellow, and/or green sweet pepper, cut into strips
- 1/3 cup mayonnaise or salad dressing
- 2 tablespoons pesto
- 1 12 inch loaf ciabatta bread, cut in half horizontally
- Fresh basil leaves
Rutabaga Hash with Onions and Crisp Bacon

1. Cook bacon in a 12-in
- 4 slices bacon, cut crosswise into 3/4-in.-wide pieces
- Olive oil
- 1 1/2 pounds rutabagas, ends trimmed, peeled, and cut into 1/2-in. dice
- 1 medium yellow onion, cut into 1/2-in. dice
- 2 celery stalks, halved lengthwise and thinly sliced
- 1 Anaheim chile, stemmed, seeded, and cut into 1/2-in. dice
- 1 small jalapeño chile, stemmed, seeded, and minced
- 3/4 teaspoon kosher or fine sea salt
- 1/2 teaspoon pepper
- 3 tablespoons chopped cilantro
- Tabasco
Roasted Cheddar Broccoli

Cut 1 large head broccoli into long spears
- 1 large head broccoli
- 2 Tbs. olive oil
- Salt
- 1/2 cup breadcrumbs (panko)
- 1 cup sharp shredded cheddar cheese
- 1 bunch scallions
- 1 Tbs olive oil
- Pinch nutmeg
Michael Symon's Pan Seared Portobello Mushrooms with Bacon and Blue Cheese

Place a large saute pan over medium high and add 1 to 2 tablespoons of olive oil
- 5 Portobello Mushrooms (cleaned)
- 2 tablespoons Butter
- 1/2 pound sliced Bacon (chopped)
- 1 Onion (finely chopped)
- 3 tablespoons All-Purpose Flour
- 2 cups Chicken Stock
- 1/2 cup Milk
- 3/4 cup Blue Cheese
- 1/2 cup Parsley (chopped)
- Olive Oil
- Salt and Pepper
Bacon, Beef & Booze Chili

1. In a large heavy pan or Dutch oven, crisp bacon
- 1 lb bacon, crisped – 2 Tablespoons of bacon fat reserved
- 2 cups finely chopped onions
- 3/4 cup finely chopped green pepper
- 1 clove garlic, minced
- 3-1/2 Tablespoons chili powder
- 1-1/2 Tablespoons ground cumin
- 1 Tablespoon dry mustard
- 1/2 teaspoon hot pepper flakes
- 1/4 teaspoon dried rosemary, crumbled
- 2 bay leaves
- 2 pounds ground beef
- 1 can (1 lb. 12 oz.) imported plum tomatoes, undrained
- 3/4 cup ginger ale
- Liquid smoke
- 1/3 cup dry red wine
- 2 Tablespoons Worcestershire sauce
- 2 teaspoons salt
- Freshly ground black pepper, to taste
- 1/4 cup ketchup
- 1/4 cup dark rum
- 2 cans (16 ounces each) pinto beans, drained and rinsed
- Liquid smoke
- Cilantro
