Chocolate Toffee Bars

1. Heat oven to 325°F. Line 9-inch square baking pan with foil; spray bottom of foil with cooking spray
- CRUST
- 1 cup all-purpose flour
- 1/3 cup Dutch-processed cocoa
- 1/8 teaspoon salt
- 1/3 cup powdered sugar
- 1/4 cup packed light brown sugar
- 1/2 cup unsalted butter, chilled, cut up
- TOPPING
- 2 (4.4-oz.) bars good-quality milk chocolate, such as Lindt, coarsely chopped
- 7 tablespoons heavy whipping cream
- 3 (1.4-oz.) chocolate-coated toffee candy bars, such as Heath bars, or 15 miniature bars, chopped

In a large bowl whisk together coconut milk, soy sauce, peanut butter, lime juice, and Sriracha sauce
- 1/4 cup unsweetened light coconut milk
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons creamy peanut butter
- 1 tablespoon lime juice
- 2 - 3 teaspoons Sriracha sauce
- 12 ounces cubed cooked chicken breast
- 1 cup bite-size red sweet pepper strips (1 medium)
- 1/2 cup thinly bias-sliced carrot (1 medium)
- 1/2 cup fresh snow pea pods
- 4 teaspoons sesame oil
- Mixed salad greens
- Lime wedges
Sizzlin' Shrimp Fried Rice

Start by cooking your rice
- 4 cups cold white rice (I like jasmine best for this, but whatever you have will do)
- 1 head of broccoli, cut into tiny florets
- 1/2 cup diced carrots
- 5 strips of bacon (and the grease from said bacon - reserved)
- 1 lb shrimp, peeled and deveined
- 1/3 C soy sauce
- 1 tablespoon corn starch
- 2 eggs
- 2 teaspoons sesame oil
- 2 stalks green onion, white and light green parts only
- salt and pepper
Southwest Barley Soup

In a Dutch oven or soup kettle, saute onion and garlic in oil until tender
- 1 medium onion, chopped
- 1 garlic clove, minced
- 1 tablespoon olive or vegetable oil
- 3 cups water
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can tomato sauce
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (14.5 ounce) can chicken broth
- 2 cups medium pearl barley
- 1 (4 ounce) can chopped green chilies, drained
- 1 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 c. bacon pieces
- Hot sauce to taste
- Chopped cilantro to taste
- Crushed tortilla chips (optional)
- Shredded cheddar (optional)
Skillet Cauliflower

Bring a large pot of water to boil over high heat
- 1 cauliflower head, cut into chunks (about 3 c.)
- 3 Tbs. butter
- 1/2 tsp. salt

- 2 medium zucchini, sliced
- 1 red sweet pepper, coarsely chopped

In a medium saucepan over medium-high heat, combine the almond butter, honey, cayenne, salt and cocoa powder
- 1/2 cup almond butter
- 1/2 cup honey
- 1/2 to 1 teaspoon cayenne pepper (more or less, to taste)
- 1/2 teaspoon kosher salt
- 1 tablespoon cocoa powder
- 1 cup toasted pumpkin seeds
- 2 cups flaked corn cereal, lightly crushed
