The Best Easy Chocolate Cake

We wanted an easy chocolate mayonnaise cake recipe that would deliver good chocolate flavor
- 1 1/2 cups unbleached all-purpose flour (7 1/2 ounces)
- 1 cup sugar (7 ounces)
- 1/2 teaspoon baking soda
- 1/4 teaspoon table salt
- 1/2 cup Dutch-processed cocoa powder (2 ounces)
- 2 ounces bittersweet chocolate, chopped fine (see note)
- 1 cup fresh black coffee, hot
- 2/3 cup mayonnaise
- 1 large egg
- 2 teaspoons vanilla extract
- Confectioners' sugar (for serving; optional)
Linguine with Shrimp and Oven Roasted Tomatoes

Preheat oven to 375 degrees F
- 1 head of garlic, about 1/2 inch cut off the top
- 1 pint cherry or grape tomatoes, all red or a mix of red and orange
- 1 large clove garlic
- 1/2 teaspoon salt, plus additional
- 1/4 cup Buddy's Breadcrumbs (see recipe)
- 1/4 cup + 2 Tablespoons extra virgin olive oil, divided
- 2 Tablespoons butter
- 1 pound large shrimp (16-20), peeled and deveined
- 1/2 cup Martini dry white wine
- 1 lemon
- 1 ‑2 cups baby spinach
- 1/2 cup rough-chopped Italian parsley
Bubbie Rae's Apple Cake

Use a spring form pan
- For the batter:
- 2 3/4 cups of sifted flour
- 1 tbsp baking powder
- 1 tsp salt
- 2 cups sugar
- 3/4 cup canola oil
- 1/4 cup orange juice
- 1 tsp vanilla extract
- 4 eggs
- Icing sugar to sprinkle on top (optional)
- For the apple filling:
- 6 apples, peeled and sliced
- 5 tbsp sugar
- 2 tsp cinnamon
Sticky Honey Garlic Sauce

The sauce is so much better than store bought jarred sauce
- 3/4 cup packed brown sugar
- 5 cloves garlic, minced
- 1 teaspoon minced fresh ginger root
- 2 1/2 cups water (use less for thicker sauce)
- 5 tablespoons honey (1/3 cup)
- 1/4 cup soy sauce
- 3 tablespoons cornstarch
- Water to dissolve cornstarch
Bran Muffins

Preheat oven to 400ºF. Stir together the bran, flour, soda and baking powder
- 1 cup wheat bran
- 1 - 1/2 cups whole wheat flour
- 1/2 cup raisins
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 cup milk
- 1/2 cup molasses or honey
- 2 tablespoons oil
- 1 egg, beaten
- 1/4 cup walnuts chopped
- Spices: cinnamon, nutmeg, cloves

- 2 medium radishes, thinly sliced (optional)

- 1/4 tsp (1 mL) black pepper
- 1/2 cup (125 mL) whipping cream
- 1 tbsp (15 mL) grated Meyer lemon zest
- 3 tbsp (45 mL) Meyer lemon juice
- 1/2 tsp (2 mL) salt
- 1/4 cup (50 mL) grated Parmesan cheese

Chicken Peanut Curry

1 Rinse chicken and pat dry
- 3 lbs boneless, skinless chicken pieces (or you can use bone-in for added flavor), cut into 1 1/2 inch wide chunks or strips
- 2/3 cup flour
- 4 Tbsp curry powder
- 2 teaspoons Kosher salt
- 1/2 teaspoon freshly ground peppercorns
- 1/3 cup olive oil
- 2 Tbsp fresh ginger, minced
- 2 Tbsp garlic, minced
- 2 serrano chili peppers, seeded, de-veined, minced
- 4 cups chicken broth
- 2/3 cup peanut butter (if using freshly ground peanuts, add 2 teaspoons of sugar)
- 1 teaspoon ground coriander seeds
- 8 green onions, chopped, greens included
- 1/3 cup each finely chopped mint and cilantro
- 3 Tbsp lime juice
