- 2 28-ounce cans crushed tomatoes
- 2 14.5-ounce cans diced tomatoes in juice
- 1/4 cup extra virgin olive oil
- 2 plump cloves garlic, thinly sliced
- 1 teaspoon (kosher) salt
- 1 sprig fresh basil
- 1/2 cup fresh basil leaves, torn into small pieces

Peel and slice carrots. Cook in water and salt in large pot approximately 30 minutes (or less)
- 2 lbs. carrots, cut into thin coins
- 1/2 tsp. salt
- 1 tbsp. flour
- 1/2 cup honey
- Dash powdered ginger
- 2 tbsp. sugar
- 2 tbsp. oil
- ~1/2 cup water (from boiled carrots; keep another 1/2 cup in case syrup is too thick)

- 2 lbs (900 g) Yukon gold potatoes
- 1 lb (450 g) onions, peeled and chopped fine
- 1 egg
- 1 tbsp (15 ml) sour cream
- 1 tbsp (15 ml) dry white wine
- 1 1/2 tsp (6 ml) garlic powder
- 1 1/2 tsp (6 ml) baking powder
- 1 1/2 tsp (6 ml) powdered chicken soup
- 3 tbsp (45 ml) flour
- 1 1/2 tbsp (6 ml) bread crumbs
- 1 1/2 tbsp (6 ml) corn flakes, crushed
- 1 tbsp (15 ml) dried herbs
- Salt and pepper to taste
- Lots of grapeseed oil, for frying

Indoor Pulled Pork with Sweet and Tangy Barbecue Sauce

Sweet paprika may be substituted for smoked paprika
- 1 cup plus 2 teaspoons table salt
- 1/2 cup plus 2 tablespoons sugar
- 3 tablespoons plus 2 teaspoons liquid smoke
- 1 boneless pork butt (about 5 pounds), cut in half horizontally (see technique below)
- 1 / cup yellow mustard
- 2 tablespoons ground black pepper
- 2 tablespoons smoked paprika (see note)
- 1 teaspoon cayenne pepper
- 1 1/2 cups ketchup
- 1/4 cup light or mild molasses
- 2 tablespoons Worcestershire sauce
- 1 tablespoon hot sauce
- 1/2 teaspoon table salt
- 1/2 teaspoon ground black pepper

- 1 cup sugar
- 6 pounds bone-in chicken parts (breasts, thighs, and drumsticks), trimmed
- 3 tablespoons vegetable oil
- Pepper
- Large disposable Aluminum roasting pan (if using charcoal) or disposable aluminum pie plate (if using gas)
- 2 wood chunks soaked in water for 30 minutes and drained (if using charcoal) or 3 cups wood chips, half of chips soaked in water for 30 minutes and drained (if using gas)

- Filling:
- 16 ounces heavy whipping cream, very cold
- 2 tablespoons confectioners' sugar
- 2 teaspoons pure vanilla extract
- 1 (14-ounce) can sweetened condensed milk
- 1/4 cup fresh diced pineapple (about the size of a pea), juice drained
- 1/4 cup shredded coconut, toasted
- 4 ounces Key lime juice (not Persian lime or lemon)
- 1/4 cup coconut chips, toasted, for garnish
